Bien Mardi Gras with Gumbo


My son, Quinn, is studying French in High School. Tonight, the Monticello High School French Club held a wonderful Mardis Gras pot luck. His French teacher, Madame Bryant, asked that we bring a gumbo. I had never made a gumbo before. I made as healthy a version as I could and was very happy with how it turned out. I think others were too, the pot was empty by  the end of the evening.

As part of the night's festivities, the students put on a small, very funny, skit. they did it in both French and English, for those of us who are not Francophones. The evening was topped off with King Cake shipped in from New Orleans. And I ended up with one of the figurines and was King of the Mardi Gras! How cool is that.
The gumbo was incredibly full flavored, rich and savory. The flavors were both distinct and blended in a very satisfying way, but it was only 232 calories, with 11 grams of fat and 2 of fiber.

I made my first Gumbo last night and it was fantastic. I used a hybrid of recipes but I found that the roux didn't get as dark like many of the other recipes called for. What did you find?

Catherine, I used a cast-iron dutch oven, so the roux also picked up all those crispy bits on the bottom to help darken it. I cooked mine about 10 minutes to get a nice deep brown.
