I am the mother of 10, grandmother of 16 with one on the way.
I am on the board and volunteer for a non-profit, compassionate ministry called Soaring Hope. I run the kitchen that feeds the homeless and hungry. We serve up to 225 meals a day and work with a completely volunteer staff.
I am also a vocalist and the keyboard player for the band ShypWreak. We play classic rock, contemporary Christian and original music. We have played for lots of non-profit agencies and fundraising shows including Soaring Hope.
I love gardening, fishing, hunting and music.
My favorite things to cook
I love to start the day out with a hearty, health meal.
Breakfast for me, usually contains eggs and can include anything from vegies and meat, to breads and herbs. The most important thing is that it has to taste incredible!
My favorite family cooking traditions
STUFF! When my kids bring friends over for dinner, they can tell them that we are probably having stuff for dinner. It could be Italian stuff, Chinese stuff, Mexican stuff etc. Stuff at our house is anything that you can serve as a one dish meal. It is always filling, health and tasty but I try to make it quick, easy and in large enough quantities that I can make homemade T.V. dinners from the remainder for emergency meals in moments.
My cooking triumphs
My biggest triumph would have to be when the day after I was home from work sick and the person that stood in for me used the menu items that were set aside for that day as well as the next so when I got there and started to prep food, I was left with less that half the items needed for that days menu. With very little time to regroup, I went to the freezer and found some frozen pepperoni and grated cheese. From the pantry I was able to pull out matzo bread, canned tomatoes, spaghetti sauce and olives.
With these few ingredients I was able to construct Matzo Pizzas for about 50 people. No one went hungry that day and in fact they loved the food.
