Broccoli and Brussels Sprout Delight

This recipe caught my eye when it was mentioned in a post on the buzz. I made it following the directions using grape tomatoes because they have more flavour at this time of the year. It's easy to prepare,cooks quickly,tastes delicious and looks very appetizing too. It truly is a delight! Thank you for sharing!

Righteous Raspberry Brownies

I made these for a family get together and got rave reviews. People came back for seconds and thirds! I didn't have any self-rising flour on hand so I used the substitution that Marianne suggested in the reviews. The substitution recipe for self-rising flour is also on this website. I also substituted frozen raspberries for the fresh. No need to defrost. Baking time was 35 minutes using a 9 x13 inch baking pan.

Bellepepper's Orzo and Wild Rice Salad

Review originally posted July 2011 when the recipe was still a personal recipe: This salad is going on our family favourites list! I made the rice and orzo ahead of time then tossed everything but the nuts and parsley together a few hours before serving. Everyone then added the nuts and parsley to their individual servings because of personal tastes. I thought there would be lots left over but the salad was soooo good that there was barely enough for a serving for lunch for one. It is a great recipe for my vegetarian daughter. Thanks so much for sharing your recipe Bellepepper! Update June 9 2014- I've made this numerous times and always get requests for the recipe!

Hard Chocolate Glaze

This gem of a recipe saved the day for me. When I turned my 9 x 13 chocolate cake out to cool it broke apart. Not a pretty sight and no time to redo. It could not be frosted with my go to chocolate frosting so I thought, maybe a ganache that I could pour over the cake. This glaze came up in my search and I made it using chocolate chips because I did not have the chocolate baking squares. It worked beautifully. The glaze covered the cake and set quickly to a smooth satiny sheen. You would never know that there was a damaged cake underneath the glaze. I will use this again for brownies, biscotti and any future cake disasters. It was a big hit at the birthday celebration. Thanks CCACHEF for a brilliant recipe.

Curried Chicken Tea Sandwiches

Tasty Lentil Tacos

Our whole family thoroughly enjoyed these tacos. I substituted vegetable broth for the chicken broth to make it truly vegetarian and that enabled me to serve it to the vegetarian in our family. It is a delicious alternative to meat filled tacos. Thanks so much for sharing.

Easy, No-Bake Nutella® Pie

I had a jar of Nutella that was nearing its best before date and needed to use it up. This recipe fit the bill. it is easy to make and incredibly delicious! It would be perfect for a summer's day when it is too hot to bake.

Apple Crisp Cups

I made these tasty little treats to send to a tennis end of season potluck supper. I also sent a plate of store bought mini coffee cakes. There were mini coffee cakes leftovers but no apple crisp cups . This year the apple crop in the area where I live was badly damaged by a very early unusual warm spell followed by frost. Macintosh apples are in short supply so I used Granny Smith apples. I halved the recipe to 24. This recipe is best made when you are not in a hurry as forming the cups is time consuming but so worth the effort. I did use my pestle to aid in forming the cups as was suggested by another reviewer. After baking, I cooled them in the pans on a rack for 10 minutes then removed them easily. I taste tested one to see how they turned out. MMMMM! Just what the title says, a bite sized apple crisp.They are perfect for a bake sale, potluck or part of a dessert tray.

Tangy Potato, Green Bean and Bacon Salad

This recipe is a welcome change from the usual mayo based potato salads and is now in our family favourites folder. The whole grain mustard adds to the flavour and appearance of the salad. I served it with barbequed steak marinated with Montreal Steak spice.

Simple Beef Pot Roast

I followed the recipe exactly and was very impressed with the results- tender with lots of juices which is amazing considering you don't add any liquid. There were only two of us eating and there was little leftover. We did find it a little salty so I will use less salt the next time.

Quinoa and Black Beans

It was my first time cooking quinoa but it won't be my last. This recipe was delicious,nutritious,easy to make and low fat! I only used 1 can of black beans and that was plenty for us. It is going in my family favourites folder.

Orange-Chip Cranberry Bread

What a wonderful combination of flavours! I made a large loaf so I had to adjust the baking time. It was moist and delicious and very festive looking when sliced. I opted not to use the glaze as the bread is sweet enough on its own.

Chicken and Gnocchi Soup

We have been making more homemade soups lately and this soup is one of the best! I poached 2 boneless chicken breasts,cut them into cubes and added them to the soup. Like most of the other reviews I didn't add the optional cornstarch. It is creamy and comforting and a new family favourite.

Raspberry Chocolate Chip Muffins

These muffins are full of flavour. The combination of tart/sweet raspberries and the chocolate is divine. The addition of oatmeal gives the muffins a dense texture not cake like at all which is what I look for in a muffin. I substituted lemon juice for the orange juice because I had no orange juice available.
