Kalua Pig in a Slow Cooker
This was SO good!!! We used a small pork shoulder roast, black lava hawaiian sea salt and some liquid smoke. Cooked it on low for about 12 hours. It was so tender, flavorful, and best of all...EASY! Will be a staple in our menu for sure.

California Grilled Veggie Sandwich
Delicious sandwich! Super filling, my husband and I didn't miss the meat at all. Since I am not a fan of squash, I used egg plant instead, added sliced portobello mushrooms and marinated artichoke hearts. Marinated the veggies in balsamic vinaigrette dressing over night as suggested by other reviews, and replaced the feta with provolone (my husband isn't a fan of feta). It was one of the best sandwiches we have had and will be a regular on our menu from now on.

Spanakopita II
I have been in love with the Spanakopita that a local place serves, and couldn't wait to try this recipe! So good!! Did make a few changes though. Used fresh spinach and sauteed it with one onion and a teaspoon of garlic. Added an extra container of feta cheese, and a handful of parmesan cheese. I omitted the extra salt and glad I did so because the feta is salty enough, and only used 2 eggs. Turned out perfect!!
