All Day Apple Butter

This turned out perfect. I cooked mine for a couple hours longer and still came out great. Next time I will use less sugar as it was just a little too sweet for our taste.

Cilantro Lime Catfish

This was great! I bought some catfish with the intention of making another dish on this website bit just didn't feel like making it anymore. I had to cook the catfish so it wouldn't go bad and was trying to find something easy and flavorful. We used everything BUT lime because we didn't have it on hand. It still came out really great! This also makes great leftovers. We used the juice of two lemons and had it with home made mashed potatoes as a side. Next time I will eat it on a fresh bed of salad greens for lunch. Will make this again.

Spaghetti with Bacon

As is, this was pretty bland, but it's a great base for a great dish. I eat turkey bacon, so used that and it was fine. To jazz it up, I also added basil, and shrimp. Next time I might try some clams with the juice to kick up the I notch on flavor...or add in some cherry tomatoes and grated Parmesan cheese, or even some fresh spinach. But as the recipe is in itself, I'll give 3 stars.

Baked Macaroni and Cheese III

This Mac n cheese was amazing! As others reviewers said DOUBLE THE SAUCE! I actually had to double the recipe and triple the sauce because it was for more people. Don't be afraid to be as generous as you want with the cheese. I added loads of cheddar, and about a cup of grated Parmesan. Instead of layering, I mixed the sauce in a bowl, then stirred in the cheese and Mac in the same bowl. Then pored in the dish and voila, it was perfect. I also added white pepper (instead of black) and garlic powder. Next time I will try to with more cheeses. This is definitely a keeper!

Slow-Cooker Pepper Steak

Very good. I used way less soy sauce because I was trying to limit saltiness. We had these the next day for lunch. Husband had his in a whole wheat wrap and I had mine over a salad (watching our carbs). I'm sure this would also taste great over rice too. Wll make again.

Roasted Vegetable Medley

Amazingly simple! We weren't huge fans of the asparagus, so we will play around with alternatives. I used what I had on hand which was asparagus, sweet potato, and mushrooms.

Yummy Quiche

This was my first quiche! It came out perfectly! I stuck with the original poster's recommendation and only used 1/2 cup of half and half. I sautéed one large onion, used turkey bacon and fat free half and half. I used 6oz. Of turkey bacon, but next time will use less. I also had a fresh jalapeño pepper from my garden and used half of it instead of the green chiles. It added a very nice flavor. Can't wait to make the next one! I used Safeway brand refrigerated crust and. Placed it in a 9 inch pan.

Mashed Sweet Potatoes

This is a great base recipe. As is, I figured it would be too sweet and too bland. So I added a little brown, white sugar, and honey. Also added cinnamon and nutmeg. We liked that it wasn't too sweet.

Healthier Oven Roasted Potatoes

Very tasty! I've made this several times since my first try! Great easy recipe. I make a whole bunch, then we eat them over the next couple of days. These are great leftovers! I do go easy on the red pepper flakes though. A little goes a long way.

Basil Shrimp

This was really very good and a hit with my party guests! I didn't have time or money for raw shrimp, so I used already cooked shrimp and warmed them up in a skillet. Still came out perfectly!!!! My only regret was that I didn't make more :)

Shrimp and Crab Bisque

This was a stellar recipe! I forgot to add the wine, but it was still phenomenal without. I did season to my taste and added a generous amount of old bay and garlic, and a tablespoon more of butter. I used fat free half and half and it was perfect. We ate this with rosemary bread. I was afraid I would net have enough liquid, but it was perfect for 2-3 people if your generous with the portions. Recommend doubling the recipe if you're cooking for more people. I will definitely make this again!

Cilantro Chicken Burgers with Avocado

These were excellent! I wasn't sure what to expect, but needed something quick to make that tasted good. I didn't go so heavy on the cilantro. I only added about a 1/4 cup. Also added a dash of cumin. We are watching our carbs, so we ate these patties on a bed of fresh spinach with the avacado and italian dressing. Very very good. Also great tip from another reviewer...don't even bother trying to handle the meat with your hands to make patties! I simply mixed everything with a spoon, then spooned into the pan and patted them into my desired size with the spoon. Never touched it and it was hassle free! Nothing came apart at all so don't listen to the voice in your head telling you to add breadcrumbs or egg! I will definataly make these again!

Curried Coconut Chicken

I thought this was wonderful!! I used everything called for in the recipe, just added mushrooms and corn. I did add waaaay more curry and sugar than the recipe called for, but that's what suited our taste. Made me think I was a world class chef, it tasted so good! I told my husband, "See, if we would have gone out to eat tonight, this would have easily cost us $30!". Great recipe that doesn't take too long to make and it tastes great!

Coconut Rice

I only gave this 4 stars because had I not added sugar to this, it would have been extremely bland. The key to making this in a slow cooker is that you have to constantly stir it. Otherwise it will burn! I added three teaspoons of sugar and made this with 1/2 cup white and 1/2 cup brown rice and it came out great. I love sweet and salty combos, so I paired this with some sauteed shrimp lightly salted. Simple, but good! Next time, I will add some mango on top for extra sweetness.

Fish Chowder II

I thought this was excellent! I knew right off the bat that 4 cups would be too much water!! So I only added 2 1/2 cups of water. I also used 1 1/2 cups evaporated milk instead of regular milk. Very good, will add carrots next time.

Very good and so comforting in the winter! Next time I will use tofu that is a bit more firm..personal preference. I added straw mushrooms and roasted seaweed. Tastes just like in the restaurant!

Tangy Honey Glazed Ham

Absolutely deeeeelish! We doubled the sauce and use a couple whole cloves instead of ground (couldn't find ground in the store). We used regular orange juice instead of zesting an orange and it came out fine. Highly recommend!!

Honey-Glazed Chicken

I really enjoyed this, but will probably add some brown sugar next time to step up the sweetness. I made with thinly sliced chicken breast and made some additions! I added corn, broccoli, and day old rice and turned this into a stir fry. It was great! Didn't have time to leave in the oven. It was still good and very tender!
