Filipino Oxtail Stew

This is my all-time favourite Filipino dish! I always have my dad make it when I visit home :) This recipe is pretty much how I make mine, however, there are a few difference: 1) I also add a pound of stewing beef to the oxtail to make it "meatier", 2) I don't use bok choy and it still has enough vegetables in it, 3) I mix the peanut butter right into the broth - the heat melts it right away, 4) I like using crunchy peanut butter for more texture. Great recipe! Everyone should try it :)

Nutty Brown Rice Salad

I've been looking for a rice salad recipe for the longest time! I used to work in a coffee house that sold a sunflower-seed-longrain rice salad that I loved, and this recipe is almost EXACTLY the same! I followed the recipe as stated and added shredded carrot and sliced green onion to it. I didn't have any beans, but the salad was just fine without them - although I will try adding chick peas in the future. I used Kraft Golden Italian dressing, and like other reviewers, added MUCH more than the recommended 2 tbsp...I added over 5 tbsp ;P But it's really up to the individual - if you like more dressing, then this recipe allows you to add more without ruining the combined flavours :) My family like this recipe so much that I had to make ANOTHER batch the next day! And my hubby suggested I make this salad for upcoming family functions :) I will continue making this salad, especially during the summer when I like eating lighter :P

Icy Lemonade Slush

I've found that with "iced" drinks, adding ice cubes waters it down too much. So what I've been doing is pouring the drink - lemonade, coffee, fruit juice, etc - into ice cube trays, then blending it to whatever consistency you prefer. This way, the ice doesn't water down the slush too much...With THIS recipe, I made the lemonade as directed, then froze it in ice cube trays. Very refreshing!

Strawberry-Pineapple Smoothie

What a great base recipe for smoothies! I used frozen fruit instead of adding the ice, added about 3 TB of sugar instead of 2, and omitted the juice altogether (I like my smoothies thick and I found that it didn't really detract from the overall taste). Can't wait for summer - lounging out in the sun with my smoothie ^_^

Campbell's Kitchen Easy Pot Roast

A very simple recipe for something that tastes SOOOO good! I usually did my roasts in the oven, and they usually came out a bit dry so I was anxious to try this recipe. And I'm glad I did! The meat came out tender and juicy, and the gravy was delicious! I added the carrots in early (as per another review) and also added in potatoes. I have to say that this recipe was alot less labour intensive as my usual roasts, and I intend to make my roasts this way from now on! :)

Italian Pasta Salad

Love this pasta salad! It's so easy and I had everything in my pantry already :) I used elbow macaroni (what I had), 1 cup of frozen peas (for some green), shredded a carrot, and an orange pepper that I had leftover. I also added some Parmesan (as per one reviewer) and some bacon bits. It was scrumptious!!! I usually buy a pasta salad dry mix, but I think I'll just use Italian dressing from now on - I use the Golden Italian type as it's not as oily as the Zesty Italian. PS. I also use Golden Italian dressing for my Brown Rice Salads as well. Instead of pasta, use cooked brown rice :P

Absolutely Ultimate Potato Soup

Loved this soup. I used butter instead of the bacon fat, and used only 6 good sized potatoes but it was still plenty :) I never thought these cream soups would be so easy to make with just ingredients already in my pantry. Next time, will try adding some shredded cheddar during the cooking process for some extra "oomph". Wonderful light supper with some bread YUMMY!

Kelsey's Favorite Stuffed Green Peppers

I've been thinking of making stuffed peppers for awhile now, but never really got around to doing it until I found this recipe. It was super easy and the meat mixture was not bland at all (according to a previous review)! I added mushrooms to give the meat mixture more texture and added breadcrumbs and grated parmesan cheese to the mozzarella. I also put a layer of tomato sauce in the baking pan so the peppers wouldn't stick or burn. It went excellent with a salad and some garlic bread :) Maybe the next time I make this, I'll add a Mexican spin to it, using salsa instead of tomato sauce and Spanish rice instead of plain rice...Thanks for posting!

Quick and Easy Brownies

I've made this recipe TWICE now - that's how good it is! The first time, I used an 8x8 glass dish and used all 4 eggs - it came out more like a CAKE. The second time, I used only 2 eggs and the suggested 9x13 glass dish - and it came out PERFECT :) The secret is in how many eggs/flour you use that makes the difference. For the second batch, I added walnuts and marshmallows for Rocky Road-style brownies and it was a hit :) This will be my go-to brownie recipe now!

Magnificent Cheesy Brown Rice

An easy and tasty recipe :) I usually add some broccoli to mine and everyone loves it - especially my 4 yr old who LOVES broccoli! Next time, will try mushrooms and the bell peppers :) This also makes a great stuffing for boneless skinless chicken breasts ^_^

Golden State Mushroom Soup

OMG This is the BEST Mushroom Soup I've ever tasted! I've always loved the cream of mushroom soups you get in the grocery store, but was always leery of trying to make it myself. I never knew it could be THIS easy :) I followed the recipe as is, just adding some minced garlic, garlic powder, and omitting the salt (since the chicken broth already had enough in it). All I had on hand was chicken stock mix and I figured out that 14.5 oz is 1.8 cups, and it worked fine - I just added more as I saw fit. But WOW, what a hearty and delicious soup :) Will be making this regularly! *UPDATE: Made this soup AGAIN the next day, but used a whole bag of frozen brocolli florets and doubled the milk and chicken broth :) Just as yummy! Next, will try making a potato version...

Apple Pie Filling

WOW! What a great recipe! The last time I made an apple pie, it came out too tart >:P But THIS recipe is JUST RIGHT :D I scaled the recipe down a bit, and used half brown sugar/half white sugar. But I have a question about when you freeze the filling...When you take it out of the freezer to use, do you need to defrost it first? And can I just refrigerate the filling instead of freezing it? Thanks for posting this recipe :) I will be using it from now on...maybe even with a homemade pie crust :D

Best Spanish Rice

I don't know why I've been BUYING Spanish Rice this whole time, but it will end now that I've tried this recipe :P It's so simple yet so flavourful, it's ridiculous! The only thing I did differently was using brown rice and adding some butter at the end - not sure why, but this is how I've always made store bought rice so I figured it couldn't hurt. Will be making this for Taco Nights instead of buying from now on ^_^

Blueberry Muffins I

This was my first time making blueberry muffins from scratch :) I took other reviewers' advice and doubled the amount of sugar. I also left in the lemon zest, which I think added some brightness to the flavour. I also used a whole pint of blueberries. Overall, a simple and flavourful recipe which I will use again and again :)

Cream of Celery Soup

Had a craving for Celery soup today and I came across this recipe. I pretty much followed the recipe as is, but I added some extra corn at the end for some texture. It came out super tasty :) DH even suggested the addition of potatoes next time, which I'll have to try! This turned out to be more of a "Vegetable Chowder", and I'll be making it again soon :)

Chocolate Macaroons I

This is the first Macaroon recipe I've ever tried and I was very pleased with the results. Since I had SWEETENED coconut, I used only 1/4 c of sugar as per a previous review, and I used only 1 c of semisweet chocolate chips. The macaroons baked up "tall", not flat which is what I was worried about esp after seeing the consistency in the mixing bowl. These macaroons came out perfect :) For half the batch, I sprinkled the tops with extra coconut before baking, which gave it that "finished" look. Next time, I will try omitting the chocolate altogether so the coconut flavour can really shine - hmm, maybe I use coconut extract instead of vanilla. We'll see :P

A-Maize-ing Corn Chowder

Great easy recipe for corn chowder. Made a few adjustments: I used chicken stock instead of water, used 2 cans of corn instead of just one and omitted the bacon to cut down on the salt content (but WILL try it next time WITH bacon). Overall, a good recipe :) And it's great for the budget, too!

Broccoli-Stuffed Sole

I always loved the Stuffed Sole that Red Lobster sold and have been searching for a recipe that is similar to it, and I think I've found a good substitute with this recipe :)I followed the recipe "as is", using some of the tips that other reviewers gave: added some breadcrumbs and Parmesan cheese to the rice mixture, as well as sprinkled it over top of the fish before baking. I used Basa fish fillets as it was all I had on hand - but I guess ANY white fish would do. I used only 3 fish fillets, so I had extra stuffing, but I just threw it in the dish with the fish as an extra side dish (the rice alone was very yummy!). Thanks for posting this recipe. I will next try the stuffing with chicken :)

Unbelievably Awesome Barbeque Chicken Pizza

An awesome and yummy alternative to regular pizza :) I've made chicken pizzas before, but never thought of mixing the bbq sauce with the pizza sauce - I always just used a small amount of bbq sauce - and I think I'll mix the 2 sauces from now on. I also season and then steam boneless skinless chicken breast in the oven, rather than cook it in oil. Other than that, this recipe is perfect. I took another poster's advice and added cooked crumbled bacon to the pizza and WOW ^_^ Will be making this as an alternative to regular pizza from now on :)

Mushroom Rice Pilaf

I've been looking for an easy Rice Pilaf recipe for the longest time, and I've finally found it! This rice was soooo tasty and soooooooo easy to make :) I used the measurements that came with Uncle Ben's Converted Rice, but other than that, I made the recipe pretty much "as is". Will be making this again...and again and again and again :D
