Balsamic Baked Tilapia

Reviewed: Nov. 13, 2012
Made this for dinner on Sunday for a big group. I know it was a hit because my brother, who is a gourmet cook even asked for the recipe. I did as a few others suggested and swapped feta for the blue cheese. Instead of just salt & pepper, I sprinkled lightly with Old Bay seafood seasoning but want to try a blackened or creole spice next. I also did a balsamic reduction with about 1/2 c. vinegar. When the fish is finished from the oven and plated atop the greens - drizzle the thickened vinegar lightly over the top of fish and pepper/onion mixture. Looks and tastes wonderful!

Pumpkin Muffins with Streusel Topping

Reviewed: Sep. 30, 2012
Just made these for breakfast and they were a hit with my family! I did make a few changes as posted by other reviewers. I added a full 2 c. of pumpkin puree and substituted about 3/4 c. chocolate chips instead of the raisins as we are a chocolate family. Also, I doubled the topping and instead of the heavier rolled oats, I used two instant oatmeal packs that I had in cinnamon roll flavor. The spices in the pack and the finer bits of oats made the topping less heavy looking and gave it a great flavor.

Chocolate Velvet Ice Cream

Reviewed: Aug. 31, 2009
Made this for a neighborhood ice cream contest and it was the first to be eaten! I even lowered the fat a bit by doing 5 egg yolks and 4 liquid eggs. Also I did half cream and the other 1/2 and 1/2. I also made brownies and rolled them into tiny balls and stirred them in after the ice cream had frozen. It was a definite show stopper!

Zucchini Bread II

Reviewed: Aug. 31, 2009
Loved this recipe but we are a chocolate house so I improvised. I added 1/4 c. cocoa and 1 cup chocolate chips instead of the raisins and nuts. The kids were surprised that it had zuchinni in it! The brown sugar is a great add as it makes a crispy crust that is so yummy! A definite keeper!
