Salmon Loaf
This is a great basic recipe. As with any "meatloaf" type recipe, almost anything can be added to customize it to your family's taste. I doubled the recipe hoping for leftovers for my lunch the next day. After adding minced onion, a few deops of liquid smoke, and a touch of cayenne pepper to the mix - it ALL disappeared at one sitting ! Quick & easy dinner entree !

Green Bean Casserole II
I am on a very limited budget, and needed something good for a potluck yesterday. It also needed to be quick and easy due to making it after church for an afternoon dinner. This was PERFECT ! I added small pearl onions , used condensed milk from another recipe I was making, and about 1/2 of a ham steak (diced) mixed in. I used 2 cans of french cut green beans, (drained), but it seemed a bit soupy, so I also added 1/2 bag of frozen french cut beans for consistancy. I used 1 1/2 cans of the french onions mixed in, (3 oz cans). Baked for 45 min due to added ingredients, then sprinkled some shredded cheddar and remaining french onions on top. Return to oven for an additional 5 to 8 min. Delicious ! This was the first empty empty dish up there ! Everyone loved it ! I will make it again for a Church potluck next weekend !

A-Number-1 Banana Cake
I made this recently as a dessert for a pot luck. It was GONE in NO TIME ! Very easy to make, and everyone loved it ! I split the differance adding about 1/2 small tub of sour cream with the buttermilk, and since a few friends do not like nuts, I added milk chocolate chips instead. I made it as a sheet cake, frosted it lightly with cream cheese frosting, decorated with slices of banana & drizzled dark chocolate stripes over the bananas both ways, corner ot corner. Beautiful and delicious ! I have made it twice since then by request for girlfriends as their birthday cake ! LOVE IT !
