Fish Chowder

This was really good! I used a mixture of fish- catfish, cod and swai. I also used half and half instead of evaporated milk. I didn't use potatoes either- making it low carb and used about 3 Tb of flour instead of the half cup. Unfortunately I was out of celery, so used some chopped carrots instead and used 1 pound of fresh mushrooms chopped in half. I added some thyme and parsley and extra black pepper. This is really, really good and I plan on making it a lot! I think it would also be really good w/ either a can of creamed corn it it or some frozen corn thrown in, and maybe some bacon crumbled on top.

Make Ahead Lunch Wraps

I added fresh cilantro, and chili powder, cumin, salt, pepper, and onion powder to the rice after it cooked. I also added extra corn (frozen) since I didn't have the pinto beans. It made 18 wraps (1/2 c. filling per 10" burrito size tortillas). I am anxious to take these to work! The filling tastes awesome! Update: These were AWESOME to freeze and take to work- just set out to thaw in the morning to microwave at lunch for a few minutes- they are SO YUMMY- especially with some picante sauce and sour cream on top! Much Healthier and Much cheaper than buying lunch out! I am getting ready to go back to school- I am a teacher- and am planning on making a double or triple recipe to freeze and take for lunch- they are THAT good! I also plan to exchange Red Heirloom Quinoa for the brown rice- I hope it's good, too! I'd give this recipe way more than 5 stars if I could.....

Chicken Pot Pie IX

This was great! I used the chicken broth that I boiled the chicken and veggies in- added 1 large onion chopped and left out the celery since I didn't have any. I also added 4 potatoes. I doubled the sauce and used 3 1/2 lbs of chicken thighs that I stripped the fat from after I boiled it. I boiled the thighs for almost an hour and added the veggies in at 30 minutes. I think adding fresh mushrooms would be good to- just didn't have any. I used a basic pie crust from this site as well- it made a 13x9 pan full of pot pie- baked it for about 45 minutes to brown the crust as well. It took some time to make but well worth the time!

Herb Roasted Pork Loin and Potatoes

I actually used another roast pork loin recipe from this site, and made the potatoes from this recipe and they were AWESOME!! Best potatoes I ever made! I microwaved 4 potatoes for 8 minutes then put them in the dish w/ the loin for the last 75 minutes. The oven temp was 325. Delicious!!!!

Herb Roasted Pork

Delicious! I roasted on top of 2 quartered onions at 325 for 2 hours. I added whole potatoes 75 minutes before the pork loin was done- rolled in olive oil, garlic powder, onion powder, salt and pepper after I microwaved them for a few minutes each (8 minutes for 4 potatoes). Delicious!

Rich Chocolate Truffle Pie

Wow, was this good! Next time I might even add 1 1/2 bags of chocolate chips to the 3/4 cup of whipping cream, then add 3/4 cup of the whipped cream- This was so good and fast! This is now going to be my 'go to' chocolate pie!

Refried Beans Without the Refry

This recipe is out of this world! It makes a LOT, though so be prepared! They are good as a dip, on flour tortillas, etc. Excellent recipe, but I add more jalapenos than it calls for- we like them spicy- I also add cheese to the top- wonderful! I alos have added a very hot ghost chile to the pot instead of jalapeno and it;s great! This is one of my all time favorites from this site and I even gave the recipe to my 23 year old son who requested the recipe after he had it at my house. And he is no cook- but he really likes to make this too- as a topper for rice (it;s cheap!),

Slow-Cooker Chicken Tortilla Soup

ok- I made a few changes based on reviews and what I had in the kitchen: I added brown rice, more hot peppers, and made the home made enchilada sauce that another reviewer suggested- although I didn't have ancho chiles, just frozen jalapenos- I chopped and boiled- seeds and all the peppers w/ 2 garlic cloves, 6 frozen chopped tomatoes, salt and cumin for the canned enchilada sauce. I also did not have cilantro, so subbed 4 frozen cilantro 'cubes'- We had lots of cilantro this June, so chopped and pulverized in my food processor w/ water and froze into cubes in the ice cube tray, then threw into zip lock bags- wa la- fresh cilantro taste to anything...I also made home made chicken stock and added that instead of broth and water.. very very good soup! I plan on making this a lot with the chicken stock I canned, along with a few frozen chicken breasts and the seasonings and corn..it's a huge hit!! Even my husband can make it when I am out of town!!
