Thousand Island Dressing II

Wow- all the money you can save by making your own dressing- AND it's as good if not better than the bottled kind! I just added a few drops of worceshrshire sauce- it's great!

No-Knead Artisan Style Bread

Wow- is all I can say! This is so good- chewy inside and crusty outside-and SO easy to make! I personally found out I do NOT like the taste of Rosemary- I don't put that in anymore- but I DO like Basil, Oregano and Garlic :) I have seen that people think it's too sticky and try to add flour- DON'T!!! Just trust that it will come out perfect even if you have to pour/roll it into the baking pan. Ok. I tried adding cinnamon and sugar- not so good- but any of the savory herbs- absolutely delicious!!My whole family loved it! This is better than any bread machine recipe out there and much more delicious!!! Also the best outcome is to use a cast iron skillet, that I have found, or baked on a pizza stone. Tried it in casserole dishes and it didn't come out as well. I took it to work for a potluck and it was gone in no time with co-workers saying it tasted exactly like the bread a pricey Italian restaurant in our area serves. Great also for dipping into meat lovers spaghetti sauce from this site! Also great to make gourmet style grilled cheese sandwiches! It's absolutely delicious!

Herb Roasted Pork

Delicious! I roasted on top of 2 quartered onions at 325 for 2 hours. I added whole potatoes 75 minutes before the pork loin was done- rolled in olive oil, garlic powder, onion powder, salt and pepper after I microwaved them for a few minutes each (8 minutes for 4 potatoes). Delicious!

Chicken Pot Pie IX

This was great! I used the chicken broth that I boiled the chicken and veggies in- added 1 large onion chopped and left out the celery since I didn't have any. I also added 4 potatoes. I doubled the sauce and used 3 1/2 lbs of chicken thighs that I stripped the fat from after I boiled it. I boiled the thighs for almost an hour and added the veggies in at 30 minutes. I think adding fresh mushrooms would be good to- just didn't have any. I used a basic pie crust from this site as well- it made a 13x9 pan full of pot pie- baked it for about 45 minutes to brown the crust as well. It took some time to make but well worth the time!

Make Ahead Lunch Wraps

I added fresh cilantro, and chili powder, cumin, salt, pepper, and onion powder to the rice after it cooked. I also added extra corn (frozen) since I didn't have the pinto beans. It made 18 wraps (1/2 c. filling per 10" burrito size tortillas). I am anxious to take these to work! The filling tastes awesome! Update: These were AWESOME to freeze and take to work- just set out to thaw in the morning to microwave at lunch for a few minutes- they are SO YUMMY- especially with some picante sauce and sour cream on top! Much Healthier and Much cheaper than buying lunch out! I am getting ready to go back to school- I am a teacher- and am planning on making a double or triple recipe to freeze and take for lunch- they are THAT good! I also plan to exchange Red Heirloom Quinoa for the brown rice- I hope it's good, too! I'd give this recipe way more than 5 stars if I could.....

Slow-Cooker Chicken Tortilla Soup

ok- I made a few changes based on reviews and what I had in the kitchen: I added rice, more hot peppers, and made the home made enchilada sauce that another reviewer suggested- although I didn;t have ancho chiles, just frozen jalapenos- I chopped and boiled- seeds and all the peppers w/ 2 garlic cloves, 6 frozen chopped tomatoes, salt and cumin for the canned enchilada sauce. I also did not have cilantro, so subbed 4 frozen cilantro 'cubes'- We had lots of cilantro this June, so chopped and pulverized in my food processor w/ water and froze into cubes in the ice cube tray, then threw into zip lock bags- wa la- fresh cilantro taste to anything! I didn't add any chicken broth, but just added 2 cups of water w. extra cumin and cjili powder... very very good soup!

Super-Delicious Zuppa Toscana

ok, I thought this soup was really good- my husband went back for more- we have never had the restaurant version - Olive Garden? but we really both liked it very well. I didn't have bacon so skipped that and used a bag of kale instead of spinach- cooked it into the soup for about 3 minutes before I added the heavy cream, stirred and then I served w/ crackers- I know it would have tasted better to me on a winter or fall night- unfortunately it was 87 today.....I will definitely make this again- when the weather is cooler:)
