Alaska Salmon Bake with Pecan Crunch Coating

Absolutely delish!! My husband and I eat fish - especially salmon - a lot.. so I am always looking for new seafood recipes. My husband definitely said that I have to make it again! I only made 2 portions, so had to divide everything from the recipe in half... and still had a lot of the bread crumb mixture, so maybe cut down on that a little.. and it's perfect! Yumm!

Baked Macaroni and Cheese with Tomato

Whole family loved it! I also added some more seasoning & a few extras like other people... italian seasoning, garlic powder + about 1/2-1 clove of minced garlic, about half of a block of cream cheese (leftover!), and believe it or not - 1 small jar of pureed carrot baby food! No one even noticed.. seriously! And it was still very good. I have made this several times, and this was the first time adding the small jar of carrots, and it was barely-if at all-noticeable! (makes me think of those cookbooks where the chefs are hiding healthy things in their kid's food!) Also, I have played around with different cheeses, but my favorite so far has been with extra-sharp white cheddar & Cabot Seriously Sharp cheddar... we are a family of sharp cheddar lovers! Good luck with your own version of this :)

Caramel Apple Pork Chops

Great family meal! My husband and 14 month old son loved this dish. I used a cast iron pan for the chops & sauce, and it worked very nicely. Also, I'm pretty sure I almost doubled the butter called for, and added just a touch of vanilla extract. Yum! Great fall dish that would pair well with brussel sprouts, mashed potatoes, even stuffing!

Lemon-Pepper Salmon

Fabulous! My hubby & I usually go for the sweet salmon recipes (brown sugar, coconut/pineapple, etc) but this was great! Will make again! (...good with just store bought couscous-tomato & lentil or pine nut by Near East are great!)

Pecan Pie Bars I

The best ever! As other people stated, these did need to be baked for approx. 15-20 mins longer than suggested (for the final cook time). I simply set my timer for 10 more mins, then another 5, then another 5...checking the bars in between each time adjustment. My husband raved and basically ate 3/4 of a full batch! Saying, "don't make these again any time soon, or I'll eat the whole batch next time" :-) Good enough for me! (3 year old son's take? "too many nuts, Mommy")

Million Dollar Fudge

Delicious! I left out the nuts...personal preference. I also used the smaller tubs of marshmallow fluff and simply used 2 whole small tubs-instead of the intended "2 cups marsh. creme". ALSO, this is the most important... I stirred the out of the mixture to melt the 4 1/2 cups sugar into the wet mix. I literally stood at the stove for 20 mins, by my timer. I know this makes a difference. I have had grainy fudge, no one likes grainy fudge. I gave every couple in my family a small amount of fudge for Christmas, and everyone loved it! It's creamier than I remember my Nana's!

Grandmother's Buttermilk Cornbread

GREAT! Has a nice flavor. I made it by the recipe and did not add anything, on my first try. It came out very nice and sweet. (not too sweet, imo, just perfect) Hubby likes with butter! Yum :)
