Incredibly Cheesy Turkey Meatloaf

I followed mostly. I used shreaded cheese instead of cubed. I also added some brown sugar to the ketchup topping. It does make it a tad sweeter, but with the turkey I dont know if it really needs that sweetness.

Creamy Potato Leek Soup II

I used skim milk instead of the heavy cream to make it healthier and then used a little cornstarch and water mixture to make it thicker. Overall though it is a very tasty recipe. I wish that I added more salt and pepper. I really didn't add any during cooking and waited for individuals to add their own.

This was okay...I felt that it as bland in flavors. I sub salsa for tomato sauce and also added a chopped jalapeno, but it still was pretty bland in flavor....i was expecting more.

Sangria! Sangria!

So over the many times that I have made this recipe my aunt and I have made it to our liking: use blackberry brandy use frozen raspberry lemonade concentrate leave out the sugar (way too sweet with it) mix everything together and pour into the glasses then add a little of the cherry juice and the carbonated water to each glass instead of the whole pitcher. We usually omit the lemons and limes because we dont have them around as often.

Six Can Chicken Tortilla Soup

A very good base recipe....definitely needs spices and seasonings. I added Salsa, taco seasoning, chili powder, and garlic powder. I also changed the 2 cans of broth to 1 can of broth and 1 can cream of chicken soup. After making it I had some left over wild rice in the refrigerator and added that to it. It helped thicken it more.

the flavors are all really good, but the dressing was WAY to much for the amount of broccoli. Next time (if there is one) I will cut the amount of dressing in half.

Flank Steak with Garlic Wine Sauce

It is a very tasty recipe...I added some sliced mushrooms to the sauce because I love mushrooms. I also added a tad beef broth. The sauce does have a purplish color to it, but what else would you expect if using merlot. I felt that it was a lot of work for the end product. Roasting the Garlic made the house smell really good, but took a long time. Overall very tasty, but seems like more work than what it is worth.

Chicken Florentine Casserole

Changes I made: In large skillet fried 4-5 strips of bacon & removed; then added a little olive oil and sauteed chicken (cut up in bite size) with some garlic, a dash of italian seasoning and some white wine, once brown remove from pan; then add a little more oil sautee 1 bag fresh spinach leaves and sliced mushrooms (i used portabello) with some garlic and white wine till liquid is gone n remove/set aside. Complete the sauce as directed (i used milk instead of half n half cause it is what I had). Layer into dish as directed. I went ahead and added some steamed broccoli and artichoke hearts to the spinach and mushroom because i needed to use them. I baked covered 350* for 20 min. Then uncovered for 10 min. It is fantastic! I think I might even add some onion to the spinach/mushroom combo next time. I also put it over some cooked rotini.

Chicken with Garlic, Basil, and Parsley

I used boneless skinless chicken tenders instead of breast halves because it is what I had. I just reduced the cooking time to 15 min. covered and then 10 min uncovered. I think I used too much garlic since I reduced the amount of chicken. It was extremely moist and I added feta cheese on top for the last 10 min.

I really liked this. It was very strong garlic flavor which I loved. I did estimate a lot on the ingredients cause I reduced the potatoes to about 6-7 red potatoes since i was making it for just 1. Will make again

Pumpkin Muffins II

These were really good. Everyone at work seemed to like them and said they were surprised by the spice in them. I used canned pumpkin and i didnt have the cloves so i left them out. I also added some brown sugar mixed with a tablespoon of butter and some flour to sprinkle on top as a crumb topping
