Tomato Rice Stew

Really liked this. There are so many things you can do with it! I had spaghetti sauce left over so used it and paste, added onions, carrots, garlic, bellpepper and left out the spinach (cuz it was frozen solid, oops) and the potatoes (too much starch). It was fantastic and my 2 year old loved it! Used sweet basil, italian seasonings. Bet it'd be good with egg noodles!

Honey Mustard Tofu

We're just learning to use tofu and this was great! The 2 year old went after the tofu like crazy (I cooked it separate, and he kept climbing on things to steal it off the plate it was on) and he just lit up at the sauce! Thanks so much!

Spicy Chicken Corn Skillet

Added cheese and it made a wonderful slightly creamy dish that wasn't too hot but still had just a tiny kick. Added some sage, oregano, and a dash of Italian seasonings. My two year old loved it!

Curried Honey Mustard Chicken

absolutely wonderful! whole family loved it - that's me, hubby, and toddler. I didn't have cayenne so I added a pinch of cumin instead, and like a previous reviewer suggested, didn't use the butter. Marinated for only 30 minutes and it was delicious. I also doubled the sauce and there was plenty to keep the chicken moist and spoon over brown rice. Served this with brown rice and california blend - cauliflower, broccoli, onions, and carrots. Thanks for sharing!

Easy Chicken Enchiladas

I made it just as is, except had to tear up sliced cheese because that's all I had. Other than that, no difference. This was wonderful! We added the chilis after it was done because everything we eat, our toddler eats, and he isn't into things quite that hot yet. He loved, and hubby said it was a keeper! Thanks so much!

Delicious Chicken Casserole

Loved this. Made the stock and it was great - have plenty to freeze for later too. I did add some cheese on top (just b/c we are huge cheese fans) and some brocolli and chopped onion. Used a can of cream of chicken and of cream of mushroom b/c that's what I had. Everyone loved it! Had enough to fill a round, 4 quart casserole dish. My toddler ate two of his bowls full and then tried to get into my bowl! This is a great recipe; thanks for sharing.

Sweet Baby Carrots

This recipe is wonderful! My toddler loves and so does my husband, both very good things. It's so simple too! I work from home and some days I just barely have enough time to get things situated for dinner. This is a perfect side dish for so many things. We especially love it with chicken. Baked Slow Cooker Chicken

First thing I made in my crockpot I received as a wedding gift from my grandmother over a year ago. Wish I had listened to her sooner about how great a crockpot is with a young child! This turned out wonderfully. I added more spices and cooked it on a bed of potatoes and carrots with some onions. Stuffed onions and bellpeppers in the chicken with some fresh chopped garlic. I might try it as is next time but I don't know because it turned out so great! My husband and my toddler boy loved this. It was truly wonderful and thanks for sharing!
