Eggplant Parmesan II

I sweated the eggplant like others have mentioned. And I added a homemade sauce with fresh tomatoes sprinkled around the eggplant slices (not on them), this made all the difference. Even my 3 and 6 year olds ate this up, great recipe!

Tipsy Peaches

These came out perfect! I used a half cup of the whisky and did as others suggested and removed the peaches while the whisky simmered. The peaches get soft quickly so very ripe peaches might turn to mush, use a firm peach. Great for guests, looked and tasted beautiful.

The Best Vegetarian Chili in the World

Wow!! No one knew it was Veggie! I wanted a real meat looking chili so I left out the garbanzo beans and corn and added 1 can of chili beans instead to keep the color dark. Also, only used 1 stalk of celery. Made it with cornbread and honey butter, perfect!! To cook I sauteed the onions and spices on the cook top then threw everything into the crock pot for 3-4 hours on high, stirring every hour. This recipe makes a LOT, enough for 6 with left overs for everyone.

Black Bean and Corn Quesadillas

YUMM!!! This is a great dish! I omitted the brown sugar and instead used sweet corn; and used Pam spray instead of butter. Cooked in the oven (with flipping once) as another reviewer suggested, so I could serve all at once for a dinner party. I made this a meal with a green salad with El Torito brand Mexican Ceasar dressing with home made tortilla strips on top (just cut up a corn tortilla and fry in a little oil). Also served with no-fat sour cream, avacado and homemade salsa (tomatoes, jalepenio, cilantro, onion, & lime juice. Great healthy meal, will definetly make it again.

Tony's Summer Pasta

YUMMM! This was so good and so easy to make, no cooking required beyond the pasta. I followed the recipe and chopped up the tomatoes as it says (the picture is not correct) and used vine rippened instead of roma. I used less garlic as everyone suggested. Served with ceasar salad and strawberries with bunt cake for dessert. A great and easy summer meal.

Honey Glazed Ham

Yumm! I kept the exact recipe, but used a 8 lb. ham instead; so there was not extra sauce. And used brown sugar in place of the syrup, like others have mentioned. I also tented the ham for the first 60 minutes, and then left uncovered the last 20 minutes.

Italian Chicken with Garlic and Lemon

Chicken was wonderful! The lemon-garlic-onion combo was great. After reading some reviews I cooked the potatoes seperately, so they wouldn't get soggy. Well turns out they didn't, but they were kind of bland. So next time I will add more juice mixture to the potatoes, but still keep them seperate. Also, this recipie takes a lot of prep time (cutting pototes, fresh garlic, etc.) so give yourself time. And my husband likes chicken breast, so I'll use boneless breast next time. In the end, it was a great dinner.

Ronaldo's Beef Carnitas

YUMMM!! Great recipe Ronaldo!! I substituted contry style pork spare ribs instead of the beef, and it was wonderful! I also forgot the garlic on accident. And I served with fresh guacamole on a corn tortilla. This was a great, EASY, recipe, that I'll make again. My husband and I loved it! Thank you!

All American Apple Pie

This was my first pie from scrach, and everyone loved it! One thing though, since it was my first pie, I didn't know to peel the apples (duh). I didn't think about it, until it was too late. Everyone still loved it though. Great receipe!!!

Angel Hair Pasta with Shrimp and Basil

Awesome recipe! I used 2 cans of 14 oz. tomatoes instead of 2 cans of 28 oz. tomatoes. One was jalepeno style, which gave it a good spicy kick. Also, parsley was not necessary. GREAT recipe, served it with BBQ chicken and salad, everyone loved it!

Garlic Salmon

The salmon turned out perfect! Very moist and flavorful, without using butter! I do question the green onions, but I just took them off after baking. Served with rice and green beans, great quick and easy meal!
