Vegetable Cheese Soup I
Very, very good. I made this for my friends (all non-vegetarians) and they loved it--one in particular who is quite the foodie. I do have to say, though, that you will need to add a lot of seasoning to give it much zest. As it stands, this recipe is somewhat bland, but it just takes adding generous amounts of salt and pepper to bring it up to speed.

Veggie Lasagna Florentine
Even my non-vegetarian friends loved this. Such a great recipe--the sauce is phenomenal. I made just a few modifications: 1) Taking the advice of other commenters, I doubled the minced garlic. 2) I used Italian Seasoning, rather than oregano, in the sauce. 3) Since I am not a huge fan of the texture of mushrooms, I minced them as finely as I could. 4) I used ricotta cheese, rather than cottage cheese. 5) I doubled the amount of ricotta/spinach filling. 6) I used almost 1 1/2 times the amount of mozzarella/parmesan as the recipe. 7) I baked it in a full-size lasagna pan, rather than a standard 9x13.

Cheesy Acorn Squash
This is my favorite way to eat squash, hands-down. I love that it's savory. My only suggestion would be to lower the time of microwaving the squash--I nuked mine for 10 minutes and it was already fairly soft. A fun variation is to substitute the mushrooms for meat (I used Trader Joe's sweet apple chicken sausage--easy to work with since it is pre-cooked). This turns it into a delicious main dish.
