Red Velvet Cupcakes

Reviewed: Jan. 29, 2011
These turned out perfect. I used cake flour and they tasted just like you buy in the bakery.

Maple Sugar Cookies

Reviewed: Oct. 8, 2010
I used butter and baked for 10 mins for a softer cookie. I brushed with maple syrup and sprinkled with sugar before baking. I rolled on parchment paper right on the cookie sheet and refrigerated for 1 hour before cutting out shapes. The dough was easy to work with and cut out perfectly. I removed the scraps and re-rolled, refrigerated and cut out with ease.

Gingerbread Biscotti

Reviewed: Dec. 19, 2011
Made as written except I added crystalized ginger cut up in tiny bits and a few turns of fresh ground pepper and I used Siagon Cinnamon. Really ramped up the spice level! This was my test run, will make again for upcoming guests and as gifts. I'd like to try it with butter sometime just to see the difference. This is as good or better than the Starbucks cookie. My husband who usually doesn't say much with my cooking experiments said this is a keeper.

Caramels

Reviewed: May 4, 2011
I took the advise of foxart58 and halved the recipe to test my ability. I used a enamel cast iron 2 Qt (Martha's). It took 1hr 5mins to reach 250 on med to med/high stirring the entire time. I think next time I will not stir constantly but often to lower the amount of cooking time. foxart58 recommended a 8x8 which I used. I sprinkled a bit of course kosher salt on the top immediately after pouring in the pan. Some of the bits I rolled in seasalt before wrapping as my DIL loves salted caramel. Turned out perfect, I will continue to make in half batches unless I need a huge amount.

The Best Lemon Tart Ever

Reviewed: May 28, 2014
Perfect tang to this tart filling, not to sweet, not to sour! I want a tart that makes my mouth water and this one did. Next time I make it I will reduce the sugar a tad only because I like my tarts on the tart side I used mini tart pans for individual servings and they turned out perfect. Just reduced the baking time a bit but I did keep an eagle eye on the filling toward the end. Going to make again for guests using full size pan . On a side note about the crust, I added in some green tea matcha powder and the combination of lemon and green tea was to die for

Halved the recipe and made exactly as directed and came out with a perfect cookie. Crisp on the edge and chewy in the middle. Made one batch extra large size and one batch smaller, both came out perfect, bravo!
