Here's my variation: 7/8 c. cocoa powder, 3/4 c. canola oil, 2 c. sugar, 3 eggs, 2 tsp. vanilla, 1 c. rice flour. Combine everything but flour, sift in flour last. bake in 9 x 9 ceramic pan at 350 for 35 minutes. Turn off oven, let cool in oven. It makes a crunchy crust on top and brownies are fudgy. The first time I tried this version it was because I had run out of regular flour and butter, but now I have a wheat-free, dairy-free brownie for friends with food restrictions!
