I cut the lemon in half, forgot the garlic, and used one long English cuke, double the green onion. I also added a big splash of red wine vinegar and feta cheese. I did soak the bulgur in 2 c of water, and after an hour all the water was absorbed and it was fine. Also, a large splash of olive oil was enough - 2/3 c. is way too much!!

Vegetarian Kale Soup

I followed the recipe almost exactly and I found it watery and bland. I used organ veg broth in cartons, 8 cups as the recipe says. I won't make this again.

Cuban Beans and Rice

I followed this recipe almost exactly but made some recommended changes and one BIG mistake - which turned out to be a good thing!! 1)I added 1/2 tbsp each chili powder and cumin seeds. Would increase that in the future and add a little cayenne. 2) My mistake - I used 4.5 cups of water instead of 2.5!!! I grabbed the wrong measuring cup and poured the can liquid into it and added water. It was simmering for about 20 min when I realized, and when I checked it a lot of the liquid had already evaporated. In the end it was the perfect consistency, like a thick chili, definitely not watery or soupy. I added a bit more salt, stirred it up, and when I served it up I added hot sauce for a kick. I'll make this again. It's easy and tastes good.

Chicken Pot Pie II

I had leftover chicken meat so I used that instead of following the first step of boiling chicken. I followed the rest of the recipe. Excptions: I used 1/2 lb of chicken meat, increased the veggies by 1/2 cup, used fresh cauliflower and carrot instead of frozen, didn't have parsely so doubled the thyme and added salt and fresh ground pepper for more flavour. I also used frozen pastry pie shells. The filling made two pies, using those shells, with top and bottom crust. I like having a bottom crust. This is a simple but time consuming recipe, and makes a nice dinner/lunch with a side of salad. I've made it more than once and will again.
