Eggplant Parmesan II
I always cut the eggplant the long way, and I happen to like the peel, so I never remove it. Fills the pan better, less work. My kids are MAJOR eaters!! and so sometimes I put sliced meatballs or thinly sliced pancetta on top, along with a generous sprinkling of Parmesan-Reggiano. I like the baking part. Makes it even easier.now, if ONLY I could keep enough (away from them) to get it into the oven! Thanks!
