Mexican Pot Roast

This is a FANTASTIC recipe and has become a new staple in our house! We include garlic cloves when searing the meat and use our favorite hot sauce - Gator Hammock Gator Sauce. When using smaller roasts, we've cut the dry ingredients in half and it comes out perfect.

Butternut Squash Soup II

Following some of the other reviews, I baked the squash at 400 for about an hour. Meanwhile I sauteed onions and minced garlic, then added the cut up carrot and 1 cut up sweet potato and added the chicken broth. Once everything was fork tender I added a pinch of curry, a pinch of cinnamon, and a pinch of cayenne powder and pureed - SCRUMPTIOUS! Definitely going to make again!!

Prize Winning Baby Back Ribs

This was AWESOME! We put yellow mustard on the ribs before putting the rub on - which worked out really well (next time I think I'm going to use dijon mustard - think it'll be that much better), and I think I'll use a smidge less cumin as we found it to be just a bit too much for our taste. Excellent recipe - can't wait to make ribs again this weekend!

Easy Salsa Meatloaf

This was excellent...tasty and very moist. I added more garlic (we're a garlic loving family), a bit more salsa, some leftover onion I had in the fridge, a little more cheese & some jalapenos...delish! Has definitely been added to the rotation, especially since we always have all the ingredients on hand!

Roast Pork with Maple and Mustard Glaze

This was exceptional and a huge hit! I used pork tenderloins and did as one person suggested and sprinkled with salt and pepper and seared it in minced garlic first. Then I placed in a large casserole dish in the oven at 380 (because I was cooking something else with it), cut up an onion into quarters and threw that in too, basted once in awhile (didn't really need much because it ended up sitting in the marinade and juices)...came out extremely tender. Delicious!
