Best Brownies

These totally hit the spot for a chocolate craving. Did increase the cocoa to 1/2 cup. Also substituted fat free greek yogurt for 1/2 the butter. Needed to cook probably 5 extra minutes for the extra moisture.

Creole Red Beans and Rice

This was really GOOD! Even the boyfriend said multiple times how yummy it was,which is unusual. Read the reviews thoroughly, used chicken stock instead of plain water, no salt just creole seasoning. It did only take 2 hours,not four but our beans weren't very old either. Will definitely make again, especially when the budget is tight. I think I spent $8 on all the ingredients,and will get at least 6 servings.

Creamy Chocolate Frosting

This will be my go to Chocolate frosting. I doubled the recipe because I was making my son a pirate ship cake and didn't want to run out. I ended up with just under two cups left over which was fine with us. By the way, if you do have leftovers, if you warm it up it makes an amazing hot fudge sauce for ice cream. Definatly spent a couple of nights eating cake scraps from carving a pirate ship with warmed up frosting and ice cream

Easy Bacon and Cheese Quiche

I made mine with cheddar cheese mix, real bacon-about 5 pieces diced and fried and I also sauteed the onion in the bacon grease before mixing the bacon, onion and cheese together. I also added some garlic powder to the mix. Really great flavor and a great general recipe that can easily be adapted to your own tastes. Only gave it 4 stars because it didn't really work for a quick weeknight dinner, took too long.

Autumn Pork Chops

We really like this. I didn't have any egg noodles so had it with steamed carrots and mashed potatoes. I doubled it since I had some pork to use. I would have been fine with leaving the sauce as one amount instead of two.

Yellow Cake

This was wonderful. The best thing about it is that it's so easy to put together, with things most people have on hand. The oj make just the right amount of secret flavor. I did only use 1/2 cup of oil and it was a little dense. but if you want a homemade tasting cake,definatly try this one.

Chocolate Cream Pudding

This is chilling in the fridge right now. I didn't have enough chocolate squares so I used regular cocoa powder with some oil (3tbsp per 1 tbsp of oil)I doubled this so that I had the same amount called for in the recipe. It turned out amazing. Tastes like chocolate brownie pudding. Very very chocolaty. I think the cocoa powder may have made it stronger. I think you could do this with any chocolate chip flavor too, just cut down on the sugar or cut it out. Definitely a keeper for us.

Meatball Nirvana

This is a great recipe. I doubled it because I had a pound of italian sausage I needed to use. And I used fresh garlic, just my preference. These were really easy to make and with doubling the recipe I ended up with 72 meatballs. cooked 24, shaped and froze the rest on a cookie sheet then when frozen put them in a plastic bag. Will never buy premade meatballs again.

Pumpkin Pancakes

These had great flavor! Like pumpkin pie for breakfast. I tried the apple syrup and it made the kitchen smell awesome. I only had cheap apple juice, I'm sure it would be much better with true apple cider. I followed the syrup instructions but it never thickened up. Still tasty though. My boyfriend thought they had good flavor but turned out soggy.

Fried Rice I

This was a great recipe for the end of the month out of money pantry. We always have rice so all i had to buy was 3 strips of bacon and one thick slice of ham. Added half a bag of frozen stir fry veggies and doubled the amount of rice, soy, and eggs. Was a great cheap dinner. I think I spent $6 on meat and frozen veg, had rice, eggs and soy on hand, had plenty left over for two lunches the next day so I got 6 servings out of this. Will definatly be adding this the the end of month list.

Granola Cereal Bars

These were pretty good. Not as healthy as some other recipes on this site, but tasty and quick. I did like how it didn't have to go in the oven and I was worried that the oatmeal would have a raw taste but it didn't. I did take the advice of some other reviews and didn't boil the mix but just got it hot. After mixing everything it seemed way to dry to I added 4 tbsp of melted butter and that helped alot. After cool and cut these tasted alot like no bake cookies.

Stuffed and Wrapped Chicken Breast

good, just not spectacular. Especially for the amount of prep work it took. Note: you have to turn the breasts over halfway through cooking to get the bacon done all the way around. The first time I pulled it out of the oven I was disappointed that the bacon that had been on the bottom of the pan was still rubbery and not done. Not appetizing.

Whole Wheat Blueberry Pancakes

These were great!! Doubled the recipe and glad I did. I did add 1tsp. vanilla, an extra egg and about 3 tbsp of Splenda. These did take longer to cook through and the first one I pulled to early and it was still gooey in the middle. With a little spread of peanut butter my 3 year old ate 3 whole pancakes!! And I didn't even feel guilty because they were so good for him.

Shrimp Scampi Bake

Just finished having this for dinner, and it was really good for how easy it was. Start to finish really 30 min and I got to use all the shrimp shells. I made cous cous as a side. Boiled shrimp shells in 2 cups water for 10 minutes while I melted the butter and made the scampi sauce then strained out the shells, put in the cous cous at the same time I put the shrimp in the oven. SO good and different. Like some of the suggestions I used 1/2 cup water and a good splash of white wine. Served with steamed cauliflower. Delicious.

High Temperature Eye-of-Round Roast

Was very nervous about cooking the roast this way but I always over cook roasts in the oven so I thought I would give it a shot. This will be the only way I cook a roast in the oven from now on. Turned out great!! Nice and pinky-red in the middle, just the way we like it.

Homemade Crispy Seasoned French Fries

This recipe was really good!! I have had trouble before getting that really crispy fry with out par cooking or frying and then doing it again but this batter did the trick. The first couple of pieces I put in I was a little nervous because they take a few minutes to brown but they turned out great. I used a large electric skillet so I could more closely monitor the heat and had mine turned on 400 degreees. Next time I think I will try doing them in the over. Healthier and because my ventilation is poor in our apartment it did make the house smell of oil for a day or so.

Quick and Easy Alfredo Sauce

If I could I would give it a 4 for flavor and a five for being so easy, but I can fix the flavor- more garlic more garlic. Really this was a great alfredo. I had my concerns when I mixed the cream cheese with the butter, it did not look like it was going to come together but you just have to keep stirring and give the cream cheese time to soften and melt. I used this for some ravioli with a big salad and crusty bread and it was great. It did make alot though and I had enough to use later in the week with macaroni, left over chicken and broccoli. Big hit with my 2 1/2 year old.

Italian Country Style Ribs

For an easy, throw together dish, this was excellent. Especially when BBQ just doesnt sound good and you get the meat on a great sale. We just boiled some rigatonie and used the sauce on the meat and the pasta. Even my super picky 2 year old ate his whole plate and then more the next day. I didn't even change it like I usually do. The only thing I did differently was I had the 26oz cans of Hunts spag. sauce on hand and not two of the same flavor so I ended up using 1 whole cand or the spicy and zesty and a half can of garlic herb. I found that the next day I had the left over sauce to put over the pasta wich was kinda dry after being in the fridge.

Amish Macaroni Salad

Great salad and style I had never made before. I only put 1/2c. of sugar in and thought it was plenty sweet. Every one loved it. Will definatly be making it several times over the summer. The amount of salad was nice since there was only 4 of us for Easter, not so much leftover you get sick of eating it but would definalty double it to take to a larger gathering or barbque.

Denise's Peanut Chicken

We really enjoyed this dish. I did as others suggested and used 1/2 cup of chunky peanut butter instead of the roasted peanuts since that is what I had on hand. I also doubled the sauce recipe so that there was enough sauce for the rice. I had never used wok oil before and really enjoyed the added flavor, had always just used what ever oil I had handy.
