Superfast Asparagus

Absolutely delicious -- could not be easier or quicker, and yet the results are top-notch. Served it to three different guests this week, each of whom raved about it. Used Tony Chachere's Creole Seasoning Mix.

Maple Salmon

WONDERFUL. I was unsure about the mix of ingredients when I made the marinade, but it came out absolutely delicious. The only modification I made was using a little extra garlic, b/c I love it and can't get enough. My only issue was that the salmon was not nearly done after 20 minutes - 30 was closer to the mark - but I assume that's more about variations between ovens.

Garlicky Summer Squash and Fresh Corn

Simple, fast and terrific! I didn't deviate much from the recipe as given: two ears of corn kernels instead of one, only about 1/8 cup onion, and as I had no fresh parsley I sprinkled in a bit of dried. Came out fresh and delicious. i served it to guests who raved about it. This will be a go-to summer side dish for me from now on.

Summer Vegetable Ratatouille

My first time ever to make ratatouille, and it came out perfect thanks to this simple recipe. The changes I made were few: I had only one green bell pepper and no zucchini, but an extra eggplant and a little more tomato. I also tossed in some mushrooms, and added a bit of oregano and balsamic vinegar. Scrumptious served over couscous.

Baked Salmon II

Simple and delicious. I followed the instructions to the letter, save for simply cooking the fish in a tinfoil packet alone and leaving it in for 50 minutes instead of 45 as I like my salmon more well-done than most. I think I could make do with a little less oil, but the fish turned out wonderful even with the full amount. I can already tell this is going to be a standby recipe for me.

White Chip Chocolate Cookies

Bookmarked this recipe to make some cookies for a friend's party - then discovered I had some ingredient problems at the last minute. Instead of vanilla, I used 2 tsp. brandy; instead of a full 1 2/3 cups of white chocolate chips, I had one cup of white chocolate chips and 2/3 cups walnuts. And the only cocoa I had on hand was Hershey's Special Dark cocoa. I thought it was still worth a shot -- followed the rest of the recipe to the letter, except for baking 11 minutes -- and the results were FABULOUS. Very tasty, very simple! And the last-minute substitutions worked so well I think I'll use them every time.

One Bowl Chocolate Cake III

Absolutely superb, just as the recipe said. Be careful about thoroughly greasing and flouring the pans, though; this is so moist it's very sticky! But scrumptious even right away -- can't wait to try it tomorrow.

Carrot Soup

Even though I like spicy food, I only used 1/8 tsp of cayenne when nearly doubling this recipe, and it was still pretty hot! (Of course, I did add half a tbsp of black pepper, which probably played into it.) My steamer was busted, so I simmered the carrots in the broth and threw in a couple sticks of celery that were starting to wilt in the fridge. Only used about 3/4 tsp of salt, but a full tbsp of both dried parsley and basil. Did not double the half and half or the butter. Delicious, creamy, hot and filling.

Sweet Summer Smoothie

It came out nowhere nearly as pink as pictured, so I wondered if I'd done it right -- but I must have, because this is delicious! I added one scoop of vanilla-flavored whey protein so it could serve as a meal replacement. Thick, creamy and scrumptious.

Strawberry-Pineapple Smoothie

Very tasty! I changed it up a fair bit - I used pineapple chunks instead of pineapple juice, added a full scoop of vanilla whey protein, and added a lot of ice; also I left out the sugar, b/c if you have all that fruit and yogurt, it's sweet enough for my taste. Came out very well, though next time I will add more ice for a thicker texture.

Stir-Fry Chicken and Vegetables

Simple and scrumptious! I tried this recipe despite some misgivings that it might be bland; nonetheless I stuck to the recipe save for adding mushrooms. To my surprise, it has a delicious savory flavor without any other additions, not even salt or pepper. Also realized at the last minute I was out of rice so served it over linguini. My lone regret is that the noodles weren't able to soak up more of the sauce.

Mom's Warm Milk

I left out the sugar but did add just a tiny bit of honey, plus a pinch of cinnamon. And my week of insomnia ended like that! Tasted great but not overpowering. Definitely will be trying this again.

Cajun Baked Catfish

Quick, easy and delicious! I put in a bit less garlic salt than the recipe called for, and a bit more pepper, but that was my only deviation from the recipe. Spicy without being overly hot (despite all that cayenne, which had me worried). Will definitely be making this again.

Barlow's Blackened Catfish

Delicious and so simple! I made this almost exactly as prepared, except that I (1) cut about half a teaspoon of the cayenne and substituted half a teaspoon of Creole seasoning, and (2) was out of Italian dressing so used olive oil instead. (In future I will probably use olive oil instead of the butter to coat the filets as well.) Came out absolutely perfect. It's a hot and spicy recipe, but that's exactly why I love it!

Easy Baked Tilapia

So easy and so delicious! I used broccoli alone instead of the vegetable medley, added a bit of parsley, and olive oil instead of butter - my only changes to the recipe. I can't believe I have only now discovered this recipe, which will certainly make many repeat appearances at my dinner table.

Energy Balls

Very tasty! I modified this to minimize the sugar by using 1/3 of chocolate flavored whey protein powder instead of cocoa powder and left out the wheat germ; I only used as much honey as necessary to make the mixture stick, which I would guess was between 3-4 tablespoons -- far less than 1/3 of a cup. If I'd had more peanut butter on hand, I suppose I could have upped that slightly and so cut down the honey even further. The results were DELICIOUS. Lots of energy and lots of protein without much sugar = win!

Quinoa and Black Beans

This is FANTASTIC stuff. Easy, tasty and great for you. Unlike some, I didn't find two cans of black beans overwhelming. I added extra cumin and a lot of black pepper; as I'm not much of an onion fan, I just left that out. I also used dried cilantro instead of fresh (and of course less of it), adding that with the rest of the spices at the beginning. The end result is still terrific. Might eventually try stirring in some diced tomatoes near the end.

Easy Shrimp Vegetable Stir Fry

Added a teaspoon of ginger and a teaspoon of red pepper flakes, as per the other reviews. My only other deviations from the recipe were to leave out the onions, to use 5 1/5 tbsp of soy sauce instead of six (ran out!) and to use regular white vinegar instead of cider vinegar. The result was indeed very tasty. My only caveat was that the sauce thickened up tremendously upon hitting the skillets -- far too much. Maybe I had the heat up too high, but I had to mix in some extra water and next time will probably mix in even more. However, the flavor combinations were terrific, and it makes for a very satisfying meal.

Thai Curry Tofu

Followed the advice of others and cut down on the seasoned salt/regular salt, but upped the curry and added a bit of cumin and cayenne. Also threw in matchstick carrots and snow peas, and I used low-fat coconut milk. Results were very tasty. Next time I'll add less onion, though, if any.
