Best Brownies

Very tasty. More "cake-like" than I prefer with brownies -- even mixing by hand -- but not all the way to fluffiness. I think the texture might work better if I added nuts or some other extra. Only deviation from the recipe came because I was out of vanilla extract; used brandy instead, with good results.

Baked Salmon II

Simple and delicious. I followed the instructions to the letter, save for simply cooking the fish in a tinfoil packet alone and leaving it in for 50 minutes instead of 45 as I like my salmon more well-done than most. I think I could make do with a little less oil, but the fish turned out wonderful even with the full amount. I can already tell this is going to be a standby recipe for me.

Easy Baked Tilapia

So easy and so delicious! I used broccoli alone instead of the vegetable medley, added a bit of parsley, and olive oil instead of butter - my only changes to the recipe. I can't believe I have only now discovered this recipe, which will certainly make many repeat appearances at my dinner table.

Banana Banana Bread

Very good! I was 1/3 of a cup short of bananas, so I made up the difference with applesauce. I also added 1/4 tsp each of nutmeg and cinnamon, plus about half a cup of pecans. I think I overstirred it a bit, as it is quite dense, but not TOO much - it's still very tasty, and very moist. Will definitely try this again, with less stirring, more extra spices. I gave the first slice to some friends who had dropped by and they wound up asking to take home half the loaf! I let them ... this time.

Gina's Lemon Pepper Chicken

This was fine, but it needed a little more zip. Next time I will add extra seasonings and be sure to brine the chicken first. Also, I don't know if it's just my oven or what, but I had to cook the chicken breasts almost twice as long as recommended before they were cooked through. If I make this recipe again, I'll be sure to cut this into filets or nuggets first, which I think might add more seasoning all the way through, and would make this cooking time more accurate.

Stir-Fry Chicken and Vegetables

Simple and scrumptious! I tried this recipe despite some misgivings that it might be bland; nonetheless I stuck to the recipe save for adding mushrooms. To my surprise, it has a delicious savory flavor without any other additions, not even salt or pepper. Also realized at the last minute I was out of rice so served it over linguini. My lone regret is that the noodles weren't able to soak up more of the sauce.

Easy Shrimp Vegetable Stir Fry

Added a teaspoon of ginger and a teaspoon of red pepper flakes, as per the other reviews. My only other deviations from the recipe were to leave out the onions, to use 5 1/5 tbsp of soy sauce instead of six (ran out!) and to use regular white vinegar instead of cider vinegar. The result was indeed very tasty. My only caveat was that the sauce thickened up tremendously upon hitting the skillets -- far too much. Maybe I had the heat up too high, but I had to mix in some extra water and next time will probably mix in even more. However, the flavor combinations were terrific, and it makes for a very satisfying meal.

Blueberry, Banana, and Peanut Butter Smoothie

Very tasty -- the unexpected flavor blend is delicious. No need for honey -- seriously, it's sweet enough as it is! I thought it was a little too much milk because I like my smoothies thicker, but that's easily amended next time.

Thai Curry Tofu

Followed the advice of others and cut down on the seasoned salt/regular salt, but upped the curry and added a bit of cumin and cayenne. Also threw in matchstick carrots and snow peas, and I used low-fat coconut milk. Results were very tasty. Next time I'll add less onion, though, if any.

White Chip Chocolate Cookies

Bookmarked this recipe to make some cookies for a friend's party - then discovered I had some ingredient problems at the last minute. Instead of vanilla, I used 2 tsp. brandy; instead of a full 1 2/3 cups of white chocolate chips, I had one cup of white chocolate chips and 2/3 cups walnuts. And the only cocoa I had on hand was Hershey's Special Dark cocoa. I thought it was still worth a shot -- followed the rest of the recipe to the letter, except for baking 11 minutes -- and the results were FABULOUS. Very tasty, very simple! And the last-minute substitutions worked so well I think I'll use them every time.

Cajun Baked Catfish

Quick, easy and delicious! I put in a bit less garlic salt than the recipe called for, and a bit more pepper, but that was my only deviation from the recipe. Spicy without being overly hot (despite all that cayenne, which had me worried). Will definitely be making this again.

No Bake Peanut Butter Pie

Easy and delicious! Subbed low-fat ingredients for most of it and lost absolutely no flavor. My only caution is that it needs to stay in the freezer or at least in the fridge until just before serving. I had it out for only 20 minutes before we ate, and already it was very, very soft -- not beyond the point of being edible, but softer than you'd hope. Still a quick and scrumptious treat.

Heavenly Blueberry Smoothie

Very good. I made only minor changes -- I used skim milk, vanilla Greek yogurt, vanilla-flavored whey protein instead of the flax seed, and omitted the honey because I knew the blueberries and banana would make it sweet enough. Extremely tasty!

Maple Salmon

WONDERFUL. I was unsure about the mix of ingredients when I made the marinade, but it came out absolutely delicious. The only modification I made was using a little extra garlic, b/c I love it and can't get enough. My only issue was that the salmon was not nearly done after 20 minutes - 30 was closer to the mark - but I assume that's more about variations between ovens.

Strawberry-Pineapple Smoothie

Very tasty! I changed it up a fair bit - I used pineapple chunks instead of pineapple juice, added a full scoop of vanilla whey protein, and added a lot of ice; also I left out the sugar, b/c if you have all that fruit and yogurt, it's sweet enough for my taste. Came out very well, though next time I will add more ice for a thicker texture.

Sweet Summer Smoothie

It came out nowhere nearly as pink as pictured, so I wondered if I'd done it right -- but I must have, because this is delicious! I added one scoop of vanilla-flavored whey protein so it could serve as a meal replacement. Thick, creamy and scrumptious.

Tandoori Fish

I made this as directed except that I only put 1/2 tablespoon of cayenne, and added 1/2 tablespoon of a tandoori seasoning mix I have. Also I had ground ginger instead of fresh. Marinated the fish overnight, broiled as suggested. VERY tasty! Will make this again.

Garlicky Summer Squash and Fresh Corn

Simple, fast and terrific! I didn't deviate much from the recipe as given: two ears of corn kernels instead of one, only about 1/8 cup onion, and as I had no fresh parsley I sprinkled in a bit of dried. Came out fresh and delicious. i served it to guests who raved about it. This will be a go-to summer side dish for me from now on.
