Caramel Popcorn Balls

Reviewed: Dec. 22, 2011
I found these to be just meh...I followed the directions exactly and found that heating the caramel for as long as the recipe called for made for very brittle caramel once it cooled. I don't like my popcorn balls to burst to pieces when you try to take a bite of it. I'm more of a truly chewy popcorn ball person. When it was still warm it was very good and it the taste is fine as well. I should have stopped just beyond soft ball stage and I've have been good. I used two bags of microwave popcorn and that was a bit too much. Three bags would have been WAY over what was needed for the amount of caramel called for.

Banana Cake Cookies

Reviewed: Sep. 26, 2011
I made these cookies today so I could use up the last two bananas of the bunch. They are very good. Moist and tasty. Although, as another reviewer noted, these are more like banana cakes in cookie form. They aren't a firm cookie consistency at all. That being said, they are delicious and a wonderful way to use up bananas that are just about to be too ripe. I drizzled chocolate icing over them my husband declared them PERFECT! Also, make sure that when you drop them on the cookie sheet you aren't using too much. These spread quite a bit. I was only putting 6 per sheet and the first batch resulted in a couple running together. Smaller scoops fixed that right up and they were prefect.

Pineapple Banana Bread

Reviewed: Sep. 13, 2011
This is a wonderful recipe. Pineapple makes a great addition to the flavor and texture of the bread. I usually add chocolate chips to my banana bread and I missed them this go round. So next time it will be banana pineapple chocolate chip bread!!

Amish Friendship Chocolate Bread

Reviewed: Jan. 8, 2011
This turned out great!! I used sugar free instant choc pudding and the "quick Amish bread starter" given by another reviewer. I also added a cup of semi sweet chocolate chips. The only thing that gave me trouble was this took FOREVER to bake all the way through. I swear by the time I was done I had baked it nearly 75 minutes! At 60 minutes it was still completely undone in the middle. I'm not sure if increasing the oven temp from the get go would help with that. Although even with all that baking, the bread was still soft and cake like and SO delicious. Definitely a keeper!!!

Chocolate Pudding Cake III

Reviewed: Dec. 10, 2010
After a recent dinner out my husband became obsessed with the chocolate pudding cake we had for dessert. So I thought I'd see if I could make it at home. I must admit I was a little skeptical of how this would turn out when I decided to give it a go. My skepticism was all for naught! This is a FABULOUS dessert! It's so easy, and so good there is no reason not to make this every single day!!! ;) Seriously though, my husband was floored. He told me that mine was better than restaurant version! He was very happy! I made it for a recent get together and the hostess asked if I had gotten it at a local bakery that always has huge lines. She was shocked that this wonderful dessert came from my own kitchen! She said "It seems like it would be SO complicated!" Little does she know it's a SNAP!! Seriously folks, if you want to please and delight the chocolate lovers in your life, make them this chocolate pudding cake! They will thank you! As for the recipe, I also did a 1/2 cup of white and brown sugar instead of the 2/3 cup. The cake was plenty sweet and very decadent. I baked it for 30 minutes and let it set for about 20 minutes more. It was warm and gooey and amazing! LOVE THIS!!

Mom's Chocolate Chip Cookies

Reviewed: Oct. 13, 2010
Very good cookies overall. I tried them as one reviewer suggested with half the butter. Also, instead of rolling them into balls I just scooped and dropped them on the cookie sheet and put them into the oven. I found that the cookies were a bit dry in texture and visually rough looking when I took them out of the oven. So I did another batch with the full cup of butter and I rolled and slightly flattened the dough when I put them on the cookie sheet. MUCH BETTER. I like my cookies to look nice and even and smooth on top. I also added some Heath Bar bits to the mix. Fabulous!! This is definitely a more cake like cookie than I usually make, but I really enjoyed the flavor and texture over all!

Breakfast Muffins

Reviewed: Jul. 23, 2010
These are really good!! Fluffy and delicious! They puffed up nice and high. I added chocolate chips to mine. They were a HIT! The only thing I would change is the temp of the oven. 400 is WAY too high to bake these for 25 minutes. I only baked mine for 18 minutes and they were done...unfortunately the bottoms browned quite a bit and they were stuck to the paper. I made another batch, changed the temp to 350 and baked for about 25 minutes, give or take. They were PERFECT!! :)

Pineapple Cranberry Punch

Reviewed: Jul. 4, 2010
This was very good for our Fourth of July picnic!! The kids loved it. The grown ups added a splash of vodka to their cups and it was PERFECT!! :) The only difference was that I had club soda on hand, not ginger ale. I think the club soda gave it a more bitter taste than it would have had with Ginger Ale. Some people might prefer that, others might not. Either way, it was very good and enjoyed by all!!

Pasta Fazul

Reviewed: Jul. 4, 2010
This was a really good pasta fagioli! (Fazul is how fagioli is pronounced!). Went together nicely...although I omitted the oregano as it makes everything taste like pizza sauce to me!!

Citrus Grove Punch

Reviewed: Jul. 3, 2010
This was pretty good. Although the recipe calls for SO MUCH sugar. I didn't add any and it was plenty sweet for me and a much healthier drink. I served it at a baby shower and it was very much enjoyed by all guests. I'd have been afraid to give a drink with so much sugar to a pregnant lady! Nobody felt the drink wasn't sweet enough. It was refreshing and it looked pretty in the crystal glasses!

Cranberry Cooler

Reviewed: Jul. 3, 2010
This was pretty good. I omitted the sugar as pineapple and cranberry juice are naturally sugary enough and I didn't add the almond extract either as I don't find that to be a pleasant taste at all. ( I made a small batch with the almond extract and confirmed my dislike of that flavor!) But just the juice and the ginger ale combination was very refreshing.

Lemon-Lime Cupcakes

Reviewed: Jun. 13, 2010
I did not care for this recipe. They were dense in an unpleasant way and there was an odd eggy taste to them. Didn't get the lemon/lime flavor at all. I think the soda was what did the recipe in for me.

Big Germans

Reviewed: Jun. 9, 2010
This recipe is PHENOMENAL!!! OH my goodness, this is light and delicious breakfast NIRVANA!!! I added a teaspoon of vanilla, warmed up the eggs for five minutes before I used them, whipped them up prior to pouring them in the mixer and I heated the milk for about 20 seconds. While the batter was mixing, the pan was in the oven with the butter melting. About few minutes later I took the pan out of the oven with the now melted butter, (sprayed the sides of the pan with a quick spray of Pam) poured the batter on top and that was that. 17 minutes later I had a fabulous, puffed up German pancake. I covered it in lemon and powdered sugar and it was PERFECT!! My husband was thrilled!!! He said it was better than The Pancake House! That is high praise in our house!! In regards to people saying this was bland...I found that using salted butter kept it from blandness. This is a really simple, delicious way to start a Saturday morning!!

Easy Oatmeal Muffins

Reviewed: May 17, 2010
These muffins turned out pretty good, very moist and fluffy. They are fairly bland in taste though, so making additions that will sweeten them up some helps. I added blueberries to mine and they were really good. I also substituted applesauce for oil and used skim milk. I only baked them for 15 minutes. Any longer and they would have been WAY over done. Also, make sure you spray the cupcake papers with some non stick spray, otherwise the muffins stick.

Banana Cupcakes

Reviewed: Apr. 13, 2010
I had some over ripe bananas that needed to be used or thrown out, so I tried this recipe this afternoon. The cupcakes turned out GREAT. Sweet and fluffy and exactly what I was looking for. I only had skim milk (instead of buttermilk)and butter (instead of shortening) in the house, and they worked just fine. The cupcakes were light and so tasty!! I topped them with chocolate frosting and they were absolutely perfect. My husband raved!! We will definitely use this recipe again when we have super ripe bananas that need to be used in a delicious way!!

World's Best Scones! From Scotland to the Savoy to the U.S.

Reviewed: Jan. 20, 2010
in a word: FANTASTIC!!!! These scones are so light and fluffy and delicious. They are perfectly sweet...not overly so. I didn't add anything to them, just served them with homemade whipped cream and Tiptree Little Scarlet Strawberry preserves. Heavenly!!! Very easy and very fast. First time I've ever made scones in my life. They were great! Will definitely use this as my go-to scones recipe!!

The Whole Jar of Peanut Butter Cookies

Reviewed: Nov. 19, 2009
These tasted really good...but for some reason mine flattened WAY out...the fork marks disappeared and they were just really thin. The taste was phenomenal...the consistency not so much. I followed the recipe exactly, so i'm not sure what happened.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Reviewed: Aug. 28, 2009
These cupcakes are SO fantastic!!! They are super easy to make. Like several other reviewers, I piped the brownie batter into the cake batter. (I used a large circular tip for this) This worked extremely well for me. There was a perfect little brownie bite in the middle of each white cupcake. They were very well received by the crowds! :) Super easy, super fun, super delicious!
