Kathy's Easy Chile Chicken and Rice

Very good...I did add some chili powder, cumin and seasoning salt. Next time I think I will try adding cilantro as well. I baked for 1 hr and then stirred in some corn rather than peas and 1/4 cup chunky salsa. Topped with cheese and crushed tortilla chips and baked for another 10-15 minutes.

BLT Dip

I've been making this dip several years now, first as a potluck contribution mainly because I had all the ingredients on hand. I make it frequently for family gatherings and it is always a hit. The only changes I make is to use the precooked Hormel bacon bits and something green like chives or green onions. The best tasting tomatoes are roma or grape tomatoes...be sure to remove the seeds and liquid. I've always used light mayo and sour cream...plenty rich enough. I really don't understand people who play with the recipe then complain that it doesn't turn out right.

Marinated Grilled Shrimp

These were really good. I didn't have any cayenne so substituted chili pepper flakes and powder. I also didn't want to open a whole can of tomato sauce so just used a small can of V-8 juice. We also had veggie kabobs of green, red and yellow peppers, onions and fresh mushrooms that I basted with the marinade. Quick and fancy enough for my husband's BD dinner. Definitely a keeper!

Strawberry Chantilly

I took this for a potluck at work. Everyone loved it. My only complaint is that it MUST be kept very cold otherwise it turns runny...perhaps a touch of unflavored gelatin might help? Very light and refreshing. I used almonds instead of walnuts, just a personal preference. I was a little disappointed that the crust did stick to the pan despite the use of Pam. Will most likely make this again but with some modifications.

Apple Squares

These are very good. I substituted toasted pecans for the walnuts and doubled the amount of apples. A splash of lemon juice brightens the taste. I also left out the white sugar, only sprinkled on the top. Wonderful fall recipe!

Annie's Fruit Salsa and Cinnamon Chips

I took this to our work potluck yesterday and got rave reviews from everyone. I did make a few slight changes based on what the other reviewers said. I substituted mango for apples and left out the sugars. I chopped everything rather than dicing as I wanted a more salsa like texture. For the preserves I used Mango/Peach pepper jelly. It was a nice surprise to folks who tasted it and said "hmmm...what is that little zing at the end?" To save time with the chips I lightly brushed both sides of the tortillas with olive oil and shook the wedges in a bag rather than sprinkling the cinnamon sugar. All in all these were a hit and will definitely make them again! Thanks for the great recipe!

Spaghetti Carbonara II

Good cool weather meal. I added more spices than called for plus cilantro and a large can of diced green chilis. Served with homestyle tortilla chips and a dollop of sour cream, yum!

Easy and Elegant Pork Tenderloin

Mediocre at best. I followed the recipe exactly and while the pork was moist this was probably due to the fact it had solutions added before it was packed. It wasn't bad...just not the 4.5 stars I was hoping for. Perhaps if it was marinated in a flavorful sauce first?
