Chocolate Chip Banana Bread II

AMAZING! TERRIFIC! Prolly the best banana bread recipe I've ever eaten! I ended up using a smidge too many chocolate chips but not by much. I also substituted the walnuts with pecans. Fabulous recipe with or without the add ins :)

Creamy Pesto Shrimp

This recipe was excellent. A big hit with the fiance who was craving pesto. I prefer to make my pesto fresh but I used jarred on hand. I also used half n half to cut some of the fat. I recommend using some of the spaghetti water to help thin out the sauce. Once you add the cheese it does thicken up remarkably fast.

Raspberry-Glazed Rosemary Chicken

I'm a big fan of raspberries both in sweet and savoury recipes so I got very excited when I saw this in my email box. Overall the recipe was excellent. I did make some changes. First of all I cut the recipe in half because it's just for my fiance and myself. Second of all, I didn't have any honey mustard so I used regular spicy brown mustard and used that. The half recipe only called for a 1/4 tsp but I prolly ended up with a rounded tablespoon of mustard into a 1/2 cup of raspberry preserves. The competing flavors were delicious. Also for those who claimed a Pinesol taste, you probably had too much dried rosemary, especially if you added the rosemary to the raspberry glaze. I omitted this completely out of the recipe and will actually lessen the rosemary amount in the herb rub the next time I make this. Dried herbs are more concentrated in flavor than fresh so less=more.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

That was incredible! My fiance and I thoroughly enjoyed this recipe. We followed some of the customization suggestions. I sauteed bella mushrooms, 1/4 red onion, 1 diced roma tomato, and garlic in olive oil then cooked the shrimp in 2 tbsp butter and another tbsp olive oil. I cooked the rest of the garlic in the shrimp butter/oil, deglazed the pan with 1/3 cup Marsala wine (white wine could work too) and melted the cream cheese with basil, marjoram and red pepper flakes thrown in. I reserved 2/3 cup of the pasta water to thin out the sauce and may consider using a smidgen more next time. I threw everything together into the sauce and it was awesome. Very delicious!! Will use again! :)

Ham and Pear Panini

I actually combined this recipe with another on here, the Pear and Brie Quesadilla. I used a tortilla, spread honey mustard then laid down some ham slices, brie slices and pear slices and then pan seared each side. It was very flavorful and delicious. I would use this again in a heartbeat.

Chicken Souvlaki Gyro Style

Awesome recipe!! The tsatziki was amazing and flavorful and the chicken marinade was spot on. I will try to upload a photo as soon as I figure it out how to show how I plated this. My bf swears it looked like a restaurant meal. I will definitely keep this. As a way of using up the leftover tsatziki, I poured the remainder over chilled red potatoes to creat Greek Potato Salad. Another gigantic hit!

Soft Peanut Butter Cookies

Great cookie. I used whole wheat flour instead of regular flour which worked out fairly well although I did feel the need to coat the cookies in sugar before squishing them with the fork. I think next time I will increase the amount of PB used to cover the whole wheat aftertaste. This is the only cookie recipe where I have had an issue with the total whole wheat substitution being problematic. Otherwise, this recipe is awesome. The cookies remain soft and are delightfully delicious. Definitely will experiment again! :)

Oatmeal Peanut Butter and Chocolate Chip Cookies

These cookies are awesome. I took some of the suggestions to increase the peanut butter and substitute milk in for the water. I also used all whole wheat flour which worked out well. I've used regular sugar and used the Splenda blends and both have turned out well. I have also used peanut butter chips in addition to chocolate chips for added creamy PB flavor.
