Very tasty! I read through the reviews before starting, so I halved the butter and flour for the roux, and I think I'll still need to add a little more milk to it when I reheat the leftovers; it does thicken up well. I didn't bother to peel and cube the potatoes (though unless I'm missing something the prep time is misleading since I don't have pre-baked potatoes around the house so I would add an hour to it), I cut them in half and used a spoon to scoop bits of potato out. I also chopped up the skin of one of the potatoes and threw it in for extra fiber -- the skin's the best part! I didn't find the need to add any extra spices, the bacon, cheese, onion, and sour cream definitely provided enough flavor. Maybe people who thought it was bland were using low-fat versions of some ingredients and that's where the taste was lost.
