Impossible Coconut Pie II

Reviewed: Sep. 27, 2011
This pie was great and exceptionally easy to make. Most people have these ingredients in their house so that makes it even better. If you have coconut extract use that instead of the vanilla extract. If not, no biggie. I used only 3 eggs and baked it for 60 minutes as the other reviews suggested. It came out perfectly! Also- I didn't have a pie plate, so I baked it in a cake pan and it came out fine. Yum!

Great recipe with spicy jerk chicken! I didn't have coconut and it was fine without it.

Creamy Mushroom Pasta

Reviewed: Sep. 5, 2011
Great recipe! I agree with the other reviews, use a package of sliced mushrooms and omit the salt. I added 1/4 cup of grated parmesean cheese to the sauce, right before serving. I also cooked 1lb of cubed chicken with 1Tbsp Italian seasoning, and added 1Tbsp minced garlic at the end of cooking it. I added the chicken to the sauce at the end and it was delicious!

Best Brownies

Reviewed: Feb. 19, 2011
These were OK. The icing was difficult to spread. I added more butter to it but then it made the brownies too moist, and they fell apart, but they were still tasty.

Turtle Cheesecake

Reviewed: Dec. 27, 2010
This is great! Here are some good hints to make it better: Use oreo cookie crumbs instead of vanilla wafers. Build up the sides of the crust and only pour the caramel close to the edge, but not all the way to the edge. When I poured it to the edge it made a large build up of caramel that was very hard. Also, allow the caramel to cool before pouring the cheese mixture on top of it. When making the cheese mixture, allow the cream cheese to come to room temp before mixing. That will make it a richer and smoother filling. Enjoy!

Awesome! You can sub dried herbs if you don't have fresh. Use half the amount of the fresh herbs if you are using dried herbs.

Pope's Valentine Cookies

Extremely crumbly dough that is very difficult to work with. If you have the patience to deal with the dough, it is a very tasty cookie.

Braided Easter Egg Bread

Reviewed: Apr. 10, 2010
Great bread! It tastes and looks awesome. I made this bread for 8 people, and doubled the recipe. Dye the eggs raw, nestle them in the bread, and once it is baked it is like the eggs are hard boiled.

Spicy Honey-Mustard Chicken Stir-Fry

Reviewed: Feb. 15, 2010
Very good! It needed an additional Tablespoon of peanut butter, and I doubled the sauce ingredients so there was extra to go over the rice. Omit the cayenne if your family does not like spicy!

Awesome! The only thing I changed is that I cut the chicken into small pieces, then sauteed it with garlic and bell peppers. I turned out great!

Easy OREO Truffles

Reviewed: Feb. 12, 2010
Awesome! The only change I made was that I sprinkled a little bit of the oreo crumbs on top of the balls insead of rolling them. It is too hard to roll them. I also sprinkled some red sugar on top for Valentine's Day.

Panettone I

Reviewed: Dec. 25, 2009
Great! I gave 4 stars because it really needs more fruit in it to be authentic Panettone. I used 1/2 cup of raisins and 1/2 cup of currants and it was much better. Also, for the second rising, if you put it in the refrigerator overnight and then punch it down and let it come to room temp (about 1.5 hrs) and then bake, it is perfect for the morning.

Nut Butter Balls

These came out great. I gave 4 stars because the dough was a bit crumbly and I had to spend extra time forming the dough balls. However, they came out fantastic and I will make them again. I made them with pecans.
