Simple Slow-Cooked Korean Beef Soft Tacos

Perfectly Roasted Vegetable

This is a good basic equation for roasted veggies. I used carrot, beets, zucchini, onion, and brussel sprouts because that's what I had on hand. I roasted at 400 for just over 30 minutes. Simple and delicious.

Quinoa, Beet, and Arugula Salad

I make this for every pot luck I go to. Everyone raves. Usually use white wine vinegar (because that's what I keep on hand) and recommend including the goat cheese- its a nice flavor addition.

Restaurant-Style Zuppa Toscana

This is a go-to in our family. I make it almost weekly in the fall/winter. I substitute ground sausage for the smoked because we like the flavor more. I also use whole milk instead of cream because we always have it on hand. The soup is still nice and creamy. A great way to get your kids to enjoy kale!

French Toast Waffles

This is my go-to waffle recipe. We like to put whip cream and strawberries on them and the texture holds up better than a traditional waffle in my opinion. Definitely worth a try.

Brooke's Best Bombshell Brownies

This is by far our favorite brownie recipe. I have substituted mint chips, and peanut butter chips for the chocolate. I even put peanut butter cups in them once- best idea ever.

Pesto Stuffed Pork Chops

I made this for guests the other day and it was a huge hit. I omitted the pine nuts because I didn't want to go to the store and these were still amazing. Pesto and feta were made for pork. You will not be disappointed.
