Grandma Johnson's Scones

Reviewed: Jun. 12, 2012
As I can't stand sour cream (no, not even in baking), I used plain Mountain High yogurt, but did need to increase the baking time by about 10-15 minutes. I added orange zest and cranberries and they came out fantastic! Definitely will make again. I'm thinking lemon zucchini next time.

Easiest Teriyaki Marinade Ever

Reviewed: May 28, 2011
Wonderful! Granted I used this more as a base for a marinade (I added more garlic, water, soy sauce, mustard powder, ginger, teriyaki sauce (from the bottle), and brought to a boil), but it came out fantastic!

Company Couscous

Reviewed: May 19, 2011
Absolutely delicious! This will be a perfect addition to holiday meals, but also works great for any night. A definite keeper. My 1 and 3 year old boys inhaled this (I did too :) ). Following another post, I subbed Italian seasoning for the basil and used vegetable stock instead of water. I also subbed red wine for the vinegar (I was out) and I forgot to about the parm until we had finished. It was still the best couscous I've ever had.

Chicken Fried Chicken

My children loved this! There were no left-overs, and neither is a big eater normally.

Mom's Zucchini Bread

Reviewed: May 2, 2011
This could not be more moist! Absolutely delicious. I did end up adding lemon zest, omitting the cinnamon, and halving the vanilla. It tastes alright but the lemon flavor is a little much and doesnt blend as well as I thought it would. Just based on the moistness and zucchini flavor, this definitely gets 5 stars and I cannot wait to try it fully following the recipe!

Red Lentil Curry

Reviewed: Mar. 27, 2011
Absolutely delicious! My new go-to lentil recipe (and we eat lentils once a week). The only differences where I used 1/2 tsp of ginger powder as I'd used up all my fresh ginger for another dish and I didn't have curry paste. I also passed on the chili powder. I boiled the lentils in about 6 cups of water with 3 veggie broth cubes as I love the extra flavor this lends the lentils.

Sloppy Joes II

Reviewed: Mar. 24, 2011
Following another review, I added BBQ sauce instead of brown sugar and as I don't eat ground beef, made this with ground turkey. My SO and sons loved this and are already begging for more! Personally, I don't like ketchup at all and think it could use significantly less but my ketchup fans loved it and actually added more.

Lemon Cream Pasta with Chicken

Reviewed: Mar. 19, 2011
The only reason I'll make this again is because my kids really liked it, but it will not be made often: I used shredded chicken and fresh lemon. This is way too lemony and if I hadn't made it myself, I would have thought it was tuna (due to flavor and not just texture).

Whole Wheat Beer Bread

Reviewed: Mar. 12, 2011
I made this with Blue Moon and really wasn't too impressed. I could see this being served with soup or chili as a decent side for dipping (catching other flavors) but not much more than that. It wasn't bad but not incredibly good.

Chicken Enchiladas I

Reviewed: Feb. 4, 2011
Delicious, and definitely a repeat!! My revisions: I used shredded chicken, 1/4 c cheese (not including topping), and no bell pepper. Sooooo good!
