Chicken Wings Pacifica

These are great! I marinated them overnight, then baked. I ran them under the broiler to firm up the sauce...yummy! These will be one of my Superbowl wing varieties!

Garlicky Appetizer Shrimp Scampi

This is an excellent recipe! I used Key West Pink shrimp, thawed. Didn't have chives, substituted parsley with great results. I melted the butter with the other ingredients, poured it over the shrimp, & chilled it about 2 hrs. Saute'd and served in deep bowls with crusty bread. Divine! I agree that more is better with the garlic & shallots- also added a healthy dash of red pepper for kick-

Golden Potato Soup

This soup is wonderful, and does well doubled. We also used a box of precooked bacon, crumbled, instead of ham, and it was even better that way!

Marinated Grilled Shrimp

I tried this out today, and my family liked it a lot. I marinated the shrimp overnight, in a ziplock bag. The flavors were great, not too overwhelming. We used the George Foreman grill, since it was raining outside. YUM! The best part is the fresh basil- don't scrimp on the dried stuff, and you will love the taste!

Hot Artichoke Dip

This is great served in Hawaiian Bread- available almost anywhere. Cut a large core into the loaf for the dip, spray with olive oil before stuffing with dip. Use the remaining bread as "croutons", cubing and lightly toasting them. I added just a PINCH of crushed red pepper flakes when blending the cheese. GREAT presentation! Dust with paprika to add color. Thanks for a great recipe!

All-Day Apple Butter

Half the fun of this great fall recipe is buying the apples! We bought ours while spending a day in the mountains, then made a Sunday project out of preparing them! If you have a handheld blender, you will not go wrong. We now have Christmas gifts that will mean so much more than something "off the shelf"! Easy and delicious!

Creamy Cheddar Cheese Soup

This is a winner! Use New York State Sharp Cheddar, which is worth the extra few pennies. I also used low-sodium broth, since the cheese tends to be a bit salty. You can always add more salt if you prefer, but it's better to start low and work up! Thanks for a terrific soup that is worthy of company!

Baked Pork Chops II

You're right, Laurie...my Mom's original recipe called for fresh chopped celery, but my kids never liked the texture. Celery seed is a great addition. Also, I forgot to mention that covering the dish tightly in foil helps keep the chops moist.

Fish in Foil

This method of cooking works with ANY type of fish- our favorite is Mahi Mahi, rubbed liberally with fresh lemon juice, patted with butter, & sprinkled with Old Bay Seasoning. Thanks for sharing such a simple way to enjoy seafood!!

Three Cheese Manicotti

This is delicious! I used parsley flakes the second time, and we didn't notice a difference. To make the filling as light as air, add to egg whites, whisked until foamy. Yum!

Creamy Dill Cucumber Toasties

THANK YOU!!! This recipe was a huge hit at my family reunion, and was SO easy! I used plain Melba Rounds, and splurged on a seedless English Cucumber. It sliced very thinly, which is key in this recipe. I used fresh dill on top; tiny sprigs arranged to look like seagrass. A faint brushing of paprika added the final color. My relatives thought I had been to culinary school! Chilled on a crisp white platter, these make a great addition to any party!

Marinated Pork Roast with Currant Sauce

This was a great recipe to prepare in a clear plastic cooking bag. No need to baste, with juicy results! Shake a little flour inside the bag before baking, to prevent sticking. No fuss, and easy cleanup.The sauce adds the final crowning touch! Yum...

Candied Chicken Breasts

My whole family loved this! The second time I made it, I didn't bother to bread the chicken- just cut into cubes and cooked with the sauce. It was even better that way! Goes great with rice. Thanks!
