Alaska Salmon Bake with Pecan Crunch Coating

This is a keeper for us! I made as posted, except I let the fish marinate in the honey butter for about an hour, and used Panko instead of bread crumbs. Delicious! Don't be shy with the sauce and the topping, the more the better!!

Mushrooms with a Soy Sauce Glaze

Easy Broiled Lobster Tails

Pineapple Upside-Down Cake VII

The most beautiful cake I've ever made! The cast iron really does add that "special something". I used a pineapple cake mix and juice from the pineapple rings in place of 1 cup of the water. Delicious! My guests loved every bite.

Chicken Florentine Casserole

This was very good- I tweaked it a bit, to suit our tastebuds. 1) Used 2 10 pkgs. of cooked roasted chicken breast strips. 2) Sauteed the mushrooms & garlic in the butter, than added soups. One each cr. of mushroom & cr. of chicken. 3) Stirred in 2 tsp. Italian seasoning, the parmesan, and 1 Tbsp. lemon juice. 4) Added the parmesan, chicken, and about 2/3 of a pint of half & half. Tastes as I went, which was KEY! 5) Placed a layer of thawed frozen spinach into 9x13 dish. Poured the chicken/soup mixture over spinach. 6) Topped with 1 bag of real bacon pieces and then 8 oz. shredded mozzarella. 7) Covered, baked 30 mins, then 10 mins. more uncovered. I served fresh fettucini on the side, and it was a hit!! Thanks for a great recipe!

Chicken Pot Pie I

I made this for the family that I cook for, and they all loved it! I used 1 can cream of chicken soup and one can of cream of potato soup. The steam-in-the-bag frozen vegetables make this even quicker to prepare. Just microwave them while you're prepping the rest, then stir them in. For seasoning, I used about a teaspoon of Montreal chicken seasoning, which adds just the right amount of flavor. Thanks for a keeper!

Salmon with Tomatoes

This a wonderful new way to cook salmon! We like it over rice as well as over angel hair pasta. I omitted the [hot sauce, used a can of Italian-style diced tomatoes, and added 1 tsp. Italian Seasoning. It was delicious and reheated well, also. Thanks, we're keeping this one!

Pretty Chicken Marinade

We loved this marinade, it's quick and doesn't call for lots of ingredients. I used chicken tenderloin strips, and stir-fried the chicken with porobello mushroom slices and onions. Can't wait to try it on pork!

Slow Cooker Ham

Excellent! The keys to success are, make sure whatever ham you choose fits your crockpot, and watch carefully after the first 4 or 5 hours. Newer crockpots seem to cook hotter than the old ones, so be aware. Mine overcooked after 6 hours in a newer, rectangular crockpot. Add the pineapple as suggested, and stud with a few whole cloves. Smells & tastes "Heavenly"...

Praline Sweet Potatoes

This is simply too good for words- I used dairy mashed sweet potatos, and only half of the sugar called for. The topping required a lot more flour than called for, but maybe I did something wrong? Will make often.

Tasty Tender Pork Tenderloin

Absolutely YUMMY!!! I did cut the honey down to 1/4 cup, I suggest mixing the dressing & soup mix together first, then add honey a bit at a time to taste. Be sure to remove the silver membrane from the pork tenderloin before cooking it... otherwise the roast will draw up & be much drier. LOVE IT!!!

Maple Salmon

Thank you, Starflower! We really enjoyed this one. I used Grade B cooking maple- available online from Highland Sugarworks. It's a staple in my kitchen, especially for ham & pork. But now I'll use it on salmon, too! I liked the foil packet idea... kept it moist & easy cleanup, too!

Grilled Chicken & Vegetable Kabobs

This marinade ROCKS!! I made a double batch of the marinade, & reserved some for basting. We used red & green bell peppers, zucchini, & Vidalia onions. I marinated everything in a baggie overnight- TOO GOOD FOR WORDS!!!

Cocktail Birthday Cake

I made this for a friend whos' diabetic, but happens to LOVE ham sandwiches! It was fun to make- I used mustard to write "Happy Birthday". People were a bit wary of it at first, but it ended up being pretty well recieved. There was a bit too much of the butter- be sure to spread it as thinly as possible. And next time, I'll spice up the cream cheese a bit. Will keep this one!

Angie's Dad's Best Cabbage Coleslaw

YUM!! Don't waste time shredding- buy the bagged coleslaw mix of cabbage & carrots, and just add the chopped onion & dressing. I used Vidalia onions, and it was delicious.

Broccoli Salad II

This is an awesome salad! I lightened it up the second time- used Light Miracle Whip, lowfat sharp cheddar (I added extra!) and 1/2 cup sunflower kernals. Also, used sweet onion (Will be awesome when Vidalia season comes!) Also cut the sugar as suggested. It's a very forgiving recipe- you can use more or less of any ingredient, & it will still taste great. Chill overnight if you have time- it makes a difference!
