Old Fashioned Pineapple Upside-Down Cake

This is a delicious cake when you make sure to add more pineapple juice to the batter! I also added a bit more almond extract since I LOVE the taste. I have found that if you're going to double this recipe, make sure to make 2 cakes. I made the mistake of pouring the doubled batter into 1 large (tall) cake pan, and although the top was super yummy, the bottom didn't have that buttery/sugary glaze seeping into it to make it super moist. It was still delicious, but I'm sure it would have been better if I had made 2 separate cakes. I am looking forward to making this again and again! We love it!

Valentino's Pizza Crust

This crust is delicious and so easy. I usually use my mixer with a dough hook, but just mix it enough to combine everything. Over mixing creates a tougher crust. I also add in a tablespoon (or more!) of Italian Seasoning to add some flavor to the crust. And then before pre-baking the crust, I spread on a lightly cooked butter/garlic mixture. It makes my pizzas wonderful. Go easy on the garlic if your company isn't a huge fan. :) Thanks for sharing this great recipe!

Good Old Fashioned Pancakes

These were delicious. I made the recipe as written above and found it a bit salty. I do agree with 90% of the reviewers and think you need to add in a teaspoon of vanilla, and decrease the salt to 3/4 to 1/2 tsp. Definitely double sift your flour, and if you're making these for kids or want to make fun shapes with your pancakes, pour the batter into an old syrup/ketchup bottle and "write" designs using the squirt top! My kids love it.

Slow-Cooker Chicken Tortilla Soup

This soup was wonderful. I added black and white beans, extra corn, an extra can of enchilada sauce, no water (all broth), and used frozen thighs. This is a super easy dinner to throw together in the morning. To save more time, combine it all at night, stick it in the fridge, and bring it out the next morning before you head out for the day. I really liked the idea of throwing cheese on the tortillas before adding them too. This was a huge hit in my household and we will DEFINITELY make it again. Thanks so much for sharing this with all of us! So yummy!!!

Grandma Johnson's Scones

This was a delicious recipe. I did change it since I didn't have a few things in my panty, but, regardless, this is a great starting recipe and easy to change. I recommend looking up substitutions though if you're unfamiliar with them since often you will need to change the amount. Here is what I did: I used blueberry yogurt instead of the sour cream, and because of it, added an extra tsp of baking soda, I also used 1/2 tsp lemon juice instead of the cream of tartar, and used a cup of fresh blueberries instead of the raisins. My family loved it. I can't wait to alter it again and see what other wonderful things I do with this recipe.
