Love, love, loved this recipe! It is so versatile. To make it healthier, I used low-fat, low-sodium chicken broth instead of the bouillon and water. Also added a qt. of my own canned tomatoes- juice and all. To compensate, added 1 Tbsp. Italian seasoning, a dash of crushed oregano, marjoram, basil and a few red pepper flakes. As suggested, I loaded this soup with 5 cloves garlic, a whole onion, 3/4 c. sliced carrots and 3/4 c. chopped celery, sauteed before adding the liquids. Wonderful served with my whole wheat rolls!
