Crab Salad III

LOVE this recipe, just made it for the third time! I used imitation crab and also added a can of mini shrimp. I omitted the celery, Raddishes and peppers, but added cucumber. I also used Old Bay instead of Dill Weed. I doubled the recipe and it turned out great. Truly delcious.

Tasty Baked Mac n Cheese

Very good and very easy! I made this for my daughter's birthday party and most of the kids really liked it. I chose the recipe because it was easier than others, which was great! The only thing I didn't like is that it was way too buttery. Per other reviews I actually cut it down and it was still too buttery. I followed the rest of the recipe exactly.

Quick and Easy Alfredo Sauce

LOVE LOVE LOVE this recipe. I have made it so many times because it is so good, so quick (seriously), and most importantly you can make it reduced fat. I used less than half of the butter than it called for, and it still tasted amazing. I also 1/3 reduced fat cream cheese and skim milk and with these two changes it was still thick and creamy. This is my new go to because I usually have all of the ingredients and it is seriously so quick and honestly so delicious!

Corn Casserole II

I make this all of the time because it is so easy, so delicious, and my picky kids love it! I usually use a bit more sour cream then it calls for (and use low-fat, still tastes fantastic) and mix the cheese in with everything else before cooking. I also use alot less butter and it is still creamy and delicious. One time I didn't have corn so just used the cream corn and it still was great! Definite keeper.

Veggie Vegetarian Chili

LOVED this chili. Even my non-vegetarian hubby loved this. I made per the recipe except added zucchini instead of carrots and also added some tofu. Will most definitely make again.

Baked Pork Chops I

My husband liked these, but did not rave about them like he usually does when I make somehing new that he loves. It was very easy to make. The cooking times in the recipe seemed to be way too much. Had I cooked them that long they would have been way overcooked.

Chicken Fettuccini Alfredo

I thought the flavor was very good, and it was very easy to make. So, based on that I would have given it 5 stars. But, the sauce seemed to make alot more then what was needed for the noodles, and it was also SUPER THICK. Perhaps I did something wrong, but it was almost clumpy when dishing it out it was so thick. I should have taken more time to read the other reviews to see how others handled this. But, based on just the recipe itself, it seemed a little too thick. I think it would be a great recipe though if I thinned it out a bit.

Mouse's Macaroni and Cheese

Good recipe. I really liked the consistency once it was cooked. Was surprised how "not-orange" it looked, more pale yellow. Could have used a bit of salt. Very easy, much easier then other homeade mac and cheese recipes.

Black Hills Golden Egg Bake

My new favorite breakfast casserole! Tons of flavor, great consistency. Husband loved it. Instead of green peppers and mushrooms I used onions, garlic, and broccoli (still sauted in butter). Prep time was a little longer than recipe suggested. I would recomend covering at least part of the time as mine got a little too brown and that part didn't taste as good.

Beef Enchiladas II

I made these for my husband as I am a vegetarian. He grew up eating authentic Mexican but has not had much since we have been married. :) Anyway, he said he definitely enjoyed the meal, but said that I should still try other enchilada recipes...he thought there should be more inside the tortillas than just the plain meat and cheese. I think next time I will try a recipe that has cream cheese or sour cream in the mixture.

Baked Potato Soup

AMAZING SOUP!! I make alot of soups, but this has been the best so far. I also halfed the basil and added a little more flour. I eliminated the bacon and used olive oil instead for onions/garlic mixture. I used red skin potatoes and left the skins on - like the added nutrients and the texture it adds. I cut these up into very small cubes and boiled them in the broth (vegetable broth) while the onions/garlic sauted. Just as the potatoes were done boiling I used a masher and mashed the potatoes some. Then I added the onion/flour mixture to the now not-boiling broth and potatoes, then brought it back to a boil for the 2 minutes. EXCELLENT SOUP. I made it for dinner, but don't think I will be able to wait to enjoy an entire boil! Oh, and this was very easy too!
