Honey Roasted Red Potatoes

A tasty idea in cooking potatoes, however, it leaves one trying to guess whether the dish is supposed to be sweet or provide a kick. Needlessly, this recipe was a little too light in taste, leading tastebuds towards "blah".

Chicken-and-Pasta Bake with Basil

I found this recipe relatively easy to make, using some plain grilled chicken breasts that had attained the 'leftover' status from a meal a few days earlier. Instead of using all asiago cheese, however, I substituted some romano and low-fat mozzarella, and ground a little fresh parmesan over the top of the entire casserole. My whole family seemed to enjoy it, already asking for it again!
