About this Cook
I'm a mom with two grown kids. I love to cook for them and they love to eat what I make! My son's favorite is pineapple upside down cake from scratch and my daughter is partial to cheesecake and coconut shrimp. My husband will eat most anything I put in front him. I like to be creative and stray from the recipes.

My cooking triumphs
I am famous for my cheesecakes. I seem to have a knack for baking up a storm!!! I only bake from scratch. I taught myself how to can when I was in my early twenties and my kids grew up on homemade applesauce and canned tomatoes for soups and chili. I still love to can when I have time.
My cooking tragedies
Ham in the crockpot about 30 years ago. I'll never live that one down!

Coconut Shrimp I
This is fabulous - just as good as Bahama Breeze. I added the 1/2 cup extra coconut to the batter and it worked great! I have tried it chilling 1/2 hour and all day and it doesn't seem to make a difference. My college student took every last shrimp with her when she went back to school!!!!
