Baby Back Ribs

Broiled for 5 minutes after baking. Was tender, juicy and delicious! Will use this technique with other marinades.

Sunday Afternoon Slow-Cooked Spare Ribs

Had a large slab of ribs, so I doubled the sauce recipe (but kept the same amount of broth). Substituted Frank's Red Hot for half of the ketchup for an extra kick. Browned in garlic and oil and then put in crock pot on low for 5 hours (skipped the boiling). Loved it!

Grilled Stuffed Red Snapper

We really enjoyed this! Cut down on the butter and added a little olive oil and lemon juice at the end to bind it a little. Also substituted a white onion for the celery. Put the "stuffing" over salmon.

Bacon Cheese Frittata

Five stars for the recipe as written. Also tried a veggie version (with red peppers, tomatoes, onions and scallions) which came out a little watery. But it's a perfect base recipe to make endless variations.

Strawberry Spinach Salad I

Looks like such a simple salad, but the flavors pack a punch. Used balsamic in place of white vinegar. Halved the oil and used only 2 Tbsp sugar. Made this for brunch and just made another batch for dinner because it was such a hit!

Chicken Pot Pie II

I made chicken soup earlier in the week and used the meat, broth and veggies from the soup (plus frozen veg). Added garlic powder and oregano to the chicken broth mixture, as other reviews recommended. Did everything else according to the recipe. A perfect use of leftovers... will definitely be making it again!

Slow-Cooked Short Ribs

Delicious! Made the recipe as written for the first time (with the exception of substituting BBQ sauce for chili sauce). The only changes I would make for next time is add a little more heat for our taste and add some carrots, celery and mushrooms. I think the veggies would be great in that sauce. This recipe is definitely a keeper!

Marinated Grilled Shrimp

Delicious! I used crushed red pepper in place of cayenne and decreased the amount of oil, but otherwise left everything the same. I made an extra batch of the marinade to toss with pasta. I will definitely be making this again!

Terrific Turkey Chili

Thought it was delish. Made a few changes based on what I had on hand... I started by sauteeing diced onions, carrots, celery and peppers with olive oil and garlic. Added and browned the turkey. Added the seasonings and liquids as listed. Left out the crushed tomatoes and zucchini. Added black beans. Served with crushed tortilla chips instead of the sour cream and green onions. Will definitely be making this again!

Firecracker Grilled Alaska Salmon

Loved this! I didn't have the time to marinate the fish, so I poured the marinade on top and baked in the oven. YUM!! Also greatly reduced the amount of oil and it didn't sacrifice the flavor at all. A definite "make-again."

Super-Simple, Super-Spicy Mongolian Beef

Used full amount of crushed red pepper, as we like heat. Tossed the beef with broccoli and water chestnuts. Served rice and edamame on the side. Will definitely put this meal into our rotation. Loved it!

Barlow's Blackened Catfish

I cut back on the cayenne and salt and still had some spice mix leftover. Also used 1/2 cup of the dressing and no butter. Easy weeknight recipe with a kick. Thanks for sharing!

Garlic Chicken

Hub and I loved it. Needed more bread crumb/parm for all of the chicken (2 lbs - 8 cutlets). Added S&P, basil and oregano to the plain bread crumbs. Also added crushed red pepper to the garlic oil. Only needed 15 minutes at 375 (for thin cutlets). Will use this for chicken parm and a number of other things as the "base" recipe. This is a keeper!
