Cod Fish Cakes

my notes: omit onions add 2-3 stems dill fronds and fine stems only. Bbq cod leftovers for fish. new white and red potatoes approx 15 work awesome. sprayed both sides with canola oil and bbq on aluminum foil and or directly on low temp oiled grill. 5 min per side. added some extra salt and lemon herb dressing.

Leftover Turkey Cheesecake

This recipe is a real conversation starter! And it tastes great too!! In our house there is no such thing as leftover stuffing or cranberry sauce, so here are my CHANGES: I made a large box of stuffing as per the instructions on the box but I had to add 3 tablespoons of gravy to the stuffing to get it extra moist, so it would press into the pan well. I used an immersion blender for the cheese mixture which worked well and made the cake light and fluffy. THE COOKING TIME WAS OFF ON THIS: after 35 minutes the centre was still runny, so I left it in for another 7 minutes. I finished it by spreading the canned sauce on top and baking it for another 10 minutes. For a total of 52 minutes cooking time. LET IT STAND FOR 5-10 MINUTES before slicing, this helped it slice beautifully. TO SERVE: No side dishes necessary for this meal, it was great on its own. This would be a great "make ahead dish" as it tasted even better the next day and was easy to reheat in the oven and microwave. Anyhow great job Sarah! This will be my new party dish for potlucks and showers.

Ladolemono - Lemon Oil Sauce for Fish or Chicken

This was a great sauce. We tossed some fresh pasta in this. We also served this as a dipping sauce with fresh prawns, quick boiled. CHANGES: I added one clove of crushed garlic and used 2 tsp of minced FRESH oregano from our yard. I think the fresh oregano made all the difference. Can't wait to try it with chicken

Holiday Cranberry Sauce

I cut sugar down to 1 .5 cups. Used coffee filter for spices. I used 1 tbsp. of ground cinnamon instead of the cinnamon sticks.. Made a double batch on thanksgiving and froze half for later. I've used this sauce as an excellent glaze for baked turkey and chicken breasts in the oven. Yummy.

Cranberry Orange Loaf

I left out the pecans and used extra finely chopped mandarin orange peel instead of the orange zest. I made some mini loaves and some muffins. The muffins hardened quickly after a day, whereas the loaves were still fine. I will make it again and stick to the loaf pans.

Leg of Lamb

I used a boneless butterflied leg of lamb for this instead of a whole leg and it turned out great and cooked much faster, about 15 minutes/lb. CHANGES: We love garlic so in addition to the fresh cloves, I mixed in garlic powder with the flour to add extra flavor. Used dijon mustard instead of prepared. Added several "dashes" of Worcestershire sauce. GRAVY TIP: I added about 1/2 c of water to the roasting pan about 15 minutes before the roast was done. It will slowly cook with the flour and juices already in the pan, so that when the roast is done you can just sieve the remaining liquid and get a really great "jus" to serve over the lamb. Served with roasted lemon potatoes and tomato salad. Will make again.

Easy French Dip Sandwiches

So easy and satifying. CHANGES: I used mozzarella instead of provolone because thats what I had on hand. Used Portuguese rolls which came out nice and crispy. Added some fresh black pepper to the dip. Added green pepper to the sandwich.

Smoked Salmon Alfredo Sauce

SERVING: We used this recipe with Canadian smoked sockeye salmon (lox style)and served with linguine. It turned out great, with salmon in every bite! ADJUSTMENT: We added fresh lemon juice and some salt to finely chopped fresh tomatoes and parsley, and served it on top of the hot pasta. It looked beautiful and the lemon went well with the salmon and the sauce. FREEZING NOTE: We froze the leftovers and it reheated wonderfully, as the sauce did not seperate on heating, as most cream sauces do.

Buttermilk Pancakes II

These were great. We reduced the recipe to 8 servings hoping to have leftovers to freeze but we ended up eating them all. We followed the recipe exactly for measurements and ingredients. however we were too hungry to wait for liquid mixture to settle to room temperature so it was a little cool when combined, which is possible why we found some of the pancakes didnb't cook all the way through. We ended up using slightly less than half a cup per pancake and cooked them on fairly low heat to get them cooked all the way through without sacraficing fluffiness. Will try again when we are less impatient!!!
