Extreme Banana Nut Bread 'EBNB'

After 70 minutes of 1 loaf it was RAW in the middle. Then other 20 minutes, still raw.

Broiled Tilapia Parmesan

Very good recipe. I didn't have the herbs, so I used dry parsley and tarragon instead, and garlic salt instead of celery salt. The lemon gave it a really nice kick and the creamy texture on top made it yummy. Thanks!

White Chocolate Fruit Tart

Disaster. The crust never formed. After 35 minutes it was this raw/dry mass of flour. Was going to make it for a picnic today and now I have to find another dessert. HUGE disappointment.

Cranberry Sauce

I used natural tangerine juice, which is what I had, but next time will cut the sugar in half. This was just TOO sweet for my taste. I can't modify it anymore because i don't have cranberries or juice left. Oh well, good base though.

Turkey and Quinoa Meatloaf

The flavors are great, but mine was a little crumbly, so it didn't hold together well. I also added one chopped zucchini to have some vegetables in the meatloaf, great addition. Thanks for the recipe!

I would give this 5 stars but it was way too frustrating to see my peas melting and having raw potatoes on a skillet. I tried cooking them for 4 minutes on the microwave before I did anything, but I ended up cooking the potatoes at the very end for 2 more minutes in the microwave because they were still raw (and fishing them out of the concoction wasn't easy!). I also added the whole small can of tomato puree and it made it less dry. This dish has an excellent flavor. Next time I will def cook the potatoes beforehand.

Rice Pudding (Kheer)

Thank you, thank you, thank you. I think I spent 1 entire week looking for an authentic Indian rice pudding. I was going to make another recipe from another site, but it called for less milk and I didn't want a thick pudding. I changed the recipe a bit but it turned out perfect: 1/2 cup of basmati rice, one can of coconut milk (two cups) and 6 cups of skim milk (maybe a little less) with a splash of heavy cream. I followed the times listed but mine needed more time. About 1 hour and 40 minutes total. I added 3/4 cups of sugar (because the coconut milk has some sugar already) and it came out perfect, not too sweet, but not bland either (my husband suggested using condensed milk next time, and that might be a good idea). Didn't have rose water and used 1/4 tsp of ground cardamom. Used slivered almonds, chopped unsalted pistachios and about 20 golden raisins (1/2 cup in total). This added more flavor and depth. This is a keeper. I can't stop eating it.

Chicken Curried Salad

Several things: way too many potatoes, I ended up cutting the amounts in half and omitting the lettuce (we're just two people) also, I added 1 stick of chopped celery and some leftover bell pepper. This is one really yummy salad. Great texture and variety of flavors and it's filled with vitamins. Thanks for the recipe, it was absolutely DIVINE!!!!

Soy Ginger Salmon

Amazing. I marinated the salmon for about 6 hours, and like some people said, it doesn't need additional sauce because the fish absorbs all the flavors. I "baked" at 350 for 25 minutes and it was to DIE for. Thanks so much for this recipe (I had some leftover marinade which I froze for another day, mmm)

Slow Cooker Beef Stew IV

I made this recipe for the second time but I added 1 can of tomato paste because some reviewers suggested. This added a nice flavor but next time I will only add half a tiny can. I also added 1 tsp of cornstarch instead of the final flour/water mixture and the consistency was perfect. Very very delicious.

Eggless Chocolate Peanut Butter Cookies

I made a few tweaks due to lack of ingredients: I added 2 parts of butter and one of margarine, because I ran out of butter. I added 2 tablespoons of chocolate syrup, since I didn't have cocoa powder and added chocolate chips. Something went wrong. Tastewise, they were pretty bland. And they expanded a lot and it was hard to place them in the cooling rack, so a few fell apart. Next time I'll stick to the recipe as is.

Spinach Brownies

These were so easy and yummy I have to say I'm impressed. I used frozen spinach, thawed and drained. I also used a blend of grated cheeses since that's what I had and a bit of crumbled feta cheese. Cooked for 35 minutes and oh boy! These were a hit. Thanks so much for the recipe, I'll be making it often.

Mexican Rice II

I had never made Mexican rice before, I guess I was intimidated by the dish, even though I grew up in Mexico. But this was phenomenal! The only changes I made were adding green onions and a whole garlic and instead of 2 cups of broth, I used two cups of water a 1 chicken bouillon cube. Delicious! Can't wait for dinner to eat with taquitos.

I agree with most of the reviews. I found this to be an excellent choice for the newbies in the "apple pie" territory. I found it a bit sweeter than my taste but, nothing that a good glass of cold milk won't fix. Also, I did bake it for an additional 30 min. Thanks for the recipe!
