Spinach and Bacon Chicken

Great idea, but needs help. The flavors are wonderful together, but the execution is why it doesn't present well. Remove wilted spinach from pan, add wine - try extra dry Vermouth btw, and then add cream OR substitute non-fat liquid cream substitute (Land-O-Lakes) that's been mixed with 2 tbsp of corn starch to thicken it. Arrange chicken on platter with spinach on top and then pour sauce over all. This recipe also benefits greatly from some onion being between removal of spinach and addition of wine. Also, try a small amount of grated swiss cheese, about 1/4 cup or less, to top of the finished result.

Homemade Vanilla Extract

I have been doing this for years and years. I use only the single jar of McCormick's vanilla beans found at the grocery store for about $3-4 with two beans in it and then use a pint of the cheapest vodka. It's still magnificent and a bottle will last me for a couple of years. It makes an amazing Christmas gift, too.

Apple Cake I

I've been making this for years, too. This recipe is my favorite part about this time of year. The "batter" is supposed to be thick like cookie dough and it would be good if they would tell you that. I have found that the cake actually has a slight cookie-like crunch to the crust that really adds to its overall deliciousness. While the oil is a healthier way to make the cake, using melted butter makes it come out SO much better. Feel free to use up to 1/4 cup less butter than indicated, too. I first stumbled upon this recipe as one for a Bundt pan and that is still the way I make it. I drizzle it with a bit of glaze before serving. I've often thought that the addition of some cranberries could really be nice, too.

Salsa Pasta Salad

I made this just for my husband who thrives on spicy foods and used habanero powder instead of chili powder. Also, as he enjoys entree salads, I added a can of pinto beans. I also added three fresh jalapeno peppers, just in case it wasn't hot enough - and it usually isn't. I heeded the advice about using less vinegar and am glad that I did.
