The Best Lemon Bars

Reviewed: Mar. 1, 2013
So 2 lemons yields 1/2cup of lemon juice and that didn't seem tart enough to me so I added a third. I also added 2tbsp of lemon zest. Be careful of the pith. You don't want to accidentally throw some in there. You'll definitely taste it. Rookie mistake on my part. There is definitely too much sugar for my personal liking. I'll use just 1c next batch. The crust was great. I have to stop myself from eating the whole batch. All in all a great recipe!

Peanut Butter Frosting

Reviewed: Dec. 2, 2011
Yikes! I've tried this frosting before and it's true, the quality of the PB sure does matter. In an effort to be health conscious I tried Bettr'n Peanut Butter and it was a miserable fail. The texture was too runny (that was even BEFORE any milk was added) and it still lacked that PB taste. Next time I make it I will for sure use JIF again. Reason for the 4 stars is I've made it in the past with JIF and it was a hit.

Bean Soup With Kale

Reviewed: Dec. 2, 2011
This is such a hearty soup! I'm not typically a lightweight eater, but this soup filled me up. I did make some modifications but not enough to where it ruined the integrity of the soup. I used 5 garlic cloves instead of the 8. Used red kidney beans and black beans because it's what I had on hand, and used a can of diced tomatoes with italian seasoning. I also didn't blend the soup with the beans. I don't mind a thin soup. Oh I also added some beer to it, mostly because it needed more liquid, I didn't have anymore broth and it's what I was drinking at the moment.

Hot Artichoke and Spinach Dip II

Reviewed: Nov. 25, 2010
Used this as a base recipe and it was fabulous! Used sour cream instead of mayo, as suggested by others. Added some cayenne and used marinated artichoke hearts. Didn't measure out my cheeses so I'm sure I used more than the recipe called for and mixed in the mozzarella as well as sprinkled it on top. Love this recipe because it gives you room to tweak it without going so far off the original. Thank you! :)

Confetti Corn

Reviewed: Nov. 25, 2010
I made this exactly as printed since I'm not a fan of altering the recipe and THEN giving it a bad rating... As is, this recipe is hum drum. I made it for thanksgiving and I was disappointed since it had some decent reviews. My brother and dad liked it, but my mom and I agreed it was "eh," definitely not a keeper. Will not be making again.

Mushroom Lentil Barley Stew

Reviewed: Mar. 6, 2010
Tried this soup yesterday, good earthy taste. Too much pepper for my liking and I actually like a lot of pepper. Even with the suggested reduction to 1 tsp, it was still too much. Maybe next time I'll reduce it to 1/2 tsp. It was slightly bland, and I was eating it I was wondering what I could add to it to give it more flavor. I didn't have summer savory and went with the italian seasoning as advised by a few others. I give it 4 stars because it's a good BASE soup and very simple to make. Definitely a keeper with a few additions. I enjoy recipes that I can tweak
