I'm slowly working my way towards senior citizen status & grateful to be alive in this place & time. I own my own business in Topsham, ME, Phoenix Embroidery & am in year 4 of this grand experiment. I recently became politically active for the 1st time in my life, & just got back from my 2nd Washington D.C. trip for the t-party rally. I am in love with my best friend and husband, Sam. I love to cook and am always trying new recipes.
My favorite things to cook
Breakfast casserole is my favorite. I love cooking new recipes and am a Food Network junkie. Love Gaida & Rachael. Chicken is also a fav and beef a close 2nd.
My favorite family cooking traditions
4th of July is Breakfast Casserole day. Always, Thanksgiving and Christmas recipes.. my stuffing is awesome if I do say so myself.
My cooking triumphs
I always follow a recipe to the letter the first time I make it & after that, I make the changes I think it needs to be better. These recipes don't need a thing but the Breakfast casserole is always being modified to suit the tastes of the members of my family. Elsa's cider beef, (Rachael Ray) and Chicken Milanese with Tomato and Fennel Sauce, (courtesy of Gaida) need absolutely NO modification whatsoever. Perfect in it's original form!
My cooking tragedies
Too traumatic to recall... I hate waste so when I mess up something, I try to fix it and turn it into something new... Not always successful ...

Caprese Appetizer
This recipe is a keeper and so simple to make... We did them a little differently by omitting the olive oil and substituting Balsamic Vinegar. We assembled the tomatoes, basil leaf and mozzarella (we used the mozzarella pearls that are available here) on the stick and then just drizzled the balsamic vinegar over them... totally delicious..

Spiced Butternut Squash Soup
The flavor of this soup was amazing.. My husband said it was the best he had ever had... loved the little bite that the cayanne pepper gave the soup. Rich, hearty and delicious... this is a keeper and we love it. Can't wait to make if for a family gathering..

Potato Salad I
If there were 10 stars, that is what I would rate this potato salad. I will forevermore make my red potato salad this way.... the only changes I made were that I used my homemade sweet relish (pint) and a tbs of horseradish... I am taking it to our family gathering this p.m. and I want to thank Rianeyjr for sharing this inspirational recipe...
