Caribbean Chicken with Pineapple-Cilantro Rice

Very good!I grilled the chicken and I did reduce the spices (except for the brown sugar) by half and had just the right amount for three large chicken breasts. I also used the pineapple juice for part of the water for the rice and added sliced baby carrots. Good flavor--not too spicy or too sweet and very easy to make. Thanks for the great recipe!

Artichoke Soup

If you like artichoke, you will love this soup! It's pretty thick, but not too rich. The other vegetables & spices give it the perfect flavor! I left out the sage and I didn't measure the vegetables so I probably used more than 1/2 c of each. I used a stick blender and left it a bit chunky. Thanks for the great recipe!!

Gluten Free Danish

These were good! I used a combination of 75% Bob's Red Mill and 25% Namaste. The chalky texture may be due to the brand of mix used. I prefer Maple Grove Farms, but didn't have it on hand. I sprinkled sliced almonds on top. I will make these again but next time I would make them a little smaller & thinner. Thanks for giving us a new breakfast option!!

Beer Cheese Soup II

This is a good, quick & easy soup! I added the cornstarch slurry after the chicken broth & let it boil (while stiring with a whisk) until it was almost as thick as gravy, then added the 1/2 & 1/2 and cheese. I used Redbridge Gluten-Free beer and also added some ground ginger, celery salt and parsley. Next time, I'm going to try it with red potatoes and bacon. Thanks for the recipe!
