Slow Cooker Chicken Taco Soup
WOW! But this is what I did different...instead of the tomato sauce, I used a can of Rotel Mexican(lime and cilantro). The chili beans I used were spicy. The 3 skinless, boneless breasts weighed in at a little over 2lbs. I also added a tsp of smoked chipotle pepper (a personal fave!), along with a tsp or so of salt, a half tsp of smoked cumin, and about a tbsp of garlic powder-NOT garlic salt; it's a big difference! My soup turned out amazing! The heat was medium for us, so maybe omit the chipotle pepper if you're not a fan of heat. But definitely add the cumin! It's a perfect addition for anything Mexican, but doesn't add the heat. YUM!!

Irish Stout Beer Pot Roast
Absolutely delicious and tender! The main thing I do different however is to brown the roast before adding it to the crock pot. I season flour with salt, pepper and garlic powder and coat the roast. Brown the roast on both sides in a pan with a little olive oil. Also I use about 2 lbs of potatoes and 6-8 cloves of garlic instead of just the 1 suggested in the recipe. (We love garlic!)

Cajun Crabmeat Au Gratin
As a few people recommended, I omitted the salt, but increased the Creole seasoning to 2 tsps, cayenne to 1 tsp, and added 1 tsp white pepper. I only used approx 1/4 cup of onion, and used all sharp cheddar for the cheeses. A-one, top-notch, and quickly disappeared as an appetizer served w/crackers, bread and crudites. Yummm!
