Fabulous Zucchini Grinders
I make this with zucchini, yellow squash, or eggplant (depending on what I have). They taste excellent! Even DH agrees that these are wonderful and he doesn't miss having meat on his sandwich/sub at all.

Red Velvet Cupcakes
I followed this recipe to the letter with one exception: I added a little lemon juice to the 1/2 cup of milk to turn it into buttermilk. This was my attempt to combat the dryness that a lot of other reviewers complained about. I'm happy to say that it worked! They did turn out a bit browner than I'd liked though so next time I make them I will try cutting the coco powder in half. For that reason, I'm only giving it 4 stars. (It's RED velvet cake after all.) Overall though, they were delicious and the frosting was too. *Someone complained that their frosting turned out gritty. I think they might have accidentally used granulated sugar instead of confectioners. My grandma always uses granulated and her frosting always tastes a bit gritty to me, no matter how much she beats/whips it.

Pepperoni Rolls
I love this recipe. The only things I did differently are the following: I added a little bit of mozzarella cheese to each roll, I cut the sugar in half (hubby didn't like them so sweet, but I thought they tasted good), and I added minced garlic to the dough. None of the changes I made were necessary, but I feel they made the rolls taste better in the end. These pepperoni rolls keep well and warm up well so I appreciate that this recipe makes 20. Fantastic! *Edit: I took another reviewer's advice and brushed the tops of the rolls with egg and sprinkled them with garlic powder and oregano. This made the rolls look so professional. My husband told me that when he took them in to work for his lunch, he had someone ask him where he'd bought them.
