Mexican Rice II

A good basic recipe, but it definitely needed some extra oomph. I added more cumin, smoked chipotle, and extra salt.

Buffalo Chicken Fingers

These were good, but needed some tweaking. I cooked mine about 13 minutes per side instead of 8. I also need more bread crumbs and egg mixture than called for. It's pretty inconvenient to run out of these things when you're elbow deep in chicken. Next time, I think I'll try a panko coating. Overall, an alright basic recipe.

Chocolate Chocolate Chip Nut Muffins

Followed the recipe exactly and wasn't pleased with the results. These muffins were dry and bland. Maybe I should have taken the advice of other reviewers and increased both the milk and oil.
