sweet and delicious. I followed the recipe exactly with the exception of doubling the amount of walnuts for the glaze (I made cupcakes and wanted more of them). Will definitely be making this again.

Raspberry Almond Coffeecake

oh this is just delightful. It's a lovely little summer dessert and a great way to take advantage of raspberry season. I prepared it as written, with the exception of doubling the recipe. I see that some other reviewers advised adding a couple tablespoons of milk (I presume this is to make the batter easier to spread) and I will probably try that next time. The batter was a tiny bit thick and so I had to use my fingers to spread it. Other than that, it worked beautifully with a 8.5" springform pan. Will absolutely make this again, it's too pretty not to!

Coconut Milk Rice Pudding

This recipe is excellent. I followed the instructions completely with the exception of replacing the mango topping with toasted coconut. My only issue, however, is that I felt there wasn't enough flavour. The coconut milk and vanilla extract gave it a lovely undertone but it was very mild. Next time I make it, I will be using coconut extract instead of vanilla extract, and doubling the amount to give it a stronger coconut flavour. Also, I think it would be a good idea to add a splash of rum or kahlua, and perhaps some raisins to make it a tad more authentic.

Heirloom Blueberry Cake

Awesome recipe. I substituted butter for shortening (the same amount) and instead of sour cream, I used 1 cup of vanilla yogurt. If you plan on doubling the recipe, I suggest baking it on 325 instead of 350, as it is a denser cake. Will definitely be making this again! and again and again and again :)

Tiramisu II

I used this Tiramisu recipe at a family function, and to say it was a hit would be an understatement. My whole family bakes and they know their desserts very well, so this is a definite 5/5. The only things I changed were the following: I used Kahlua instead of Rum because I like its flavour more, and I used MUCH more than 1/4 cup of strong coffee. I used about 1.5 cups per layer of lady fingers. I didn't soak them beforehand, I simply laid them dry and then poured the 1.5 cups of coffee (mixed with about 1/4 cup kahlua) onto them. This worked well since the ladyfingers absorb very quickly. I also found the mascarpone mixture difficult to spread with a spatula (it's quick thick) so just a head up: it's probably easiest to use your washed hands. In accordance with one other review here, I made it 24 hours before it was to be served, and I agree that the flavour was more intense. Happy Baking!
