Chunky Vegetarian Vegetable Soup (Fast and Easy)

Great soup. Substituted grean beans and peas for the okra and edamame just because that is what I had on hand. I liked that this soup didn't have an overly acidic, tomato flavor. The corn gave it a nice sweetness.

Slow Cooker Stuffing

This stuffing turned out really good. I used vegetable stock instead of chicken since i'm a vegetarian, and also omitted the egg due to my nephews food allergies. I used dried bread cubes and around 3 cups of stock total. Just one word of caution, I kept an eye on the stuffing, stirring every hour or so to bring the wet ingredients to the top. But then I had to go out for about 2 hours, and when I came back, the stuffing had really cooked down and turned dark brown. Still tasted good, but I would have probably turned the cooker off sooner had I been watching it. Overall a keeper recipe!

Zucchini Cookies

Great cookies...so easy to make. I omitted the raisins just because I didn't have any. I also did as another poster recommended and smashed the cookies down with a spatula as soon as they came out of the oven. I liked that it gave them a more 'cookie' texture and less like a cake or loaf of zucchini bread.

Vegetarian Sweet and Sour Meatballs

These meatballs are very versatile. I make them plain, without any sauce. Then they can be basically a meat substitute for anything. Covered with mushroom gravy, they were my thanksgiving turkey replacement. Warmed with marinara, perfect meatball hoagie. Siracha hot sauce turn them into a spicy appetizer. Love this recipe, a must for vegetarians that don't want to eat the store bought "meat substitute" products.

Cream Cheese Penguins

These were a big hit at the Christmas party. I loaded the cream cheese into a plastic sandwich bag and snipped off the corner for an instant piping bag that really made filling them easy. A damp paper towel quickly cleaned up any cream cheese that got on the outside of the olive.
