Mexican Casserole
We LOVE this recipe!! For a little kick, I used medium salsa and upped the measurement to about a cup, and added about 2 cups of torn fresh spinach about 4 minutes before finished for a little extra nutrition. When done, I added about one cup of shredded cheese before topping with crushed corn ships and additional cheese. This is great to make the night before for the hubby to reheat, add the chips and cheese, and bake for when I'm going to work late.

Stuffed Green Peppers I
This was the first time I've made stuffed green peppers. I used jasmine rice because that's what I had in my pantry and I used two cans of tomatoes instead one, and this turned out fabulous. My husband even enjoyed it and stuffed green peppers isn't at the top of his list of favorite foods to eat.

Cinnamon Cookies I
My husband asked for a cinnamon cookie but had no clue exactly what he wanted it to taste like except "cinnamon" (as if that helps a lot). I found this recipe and tried it - he LOVED it. I used a round cookie cutter and sprinkled a little red decorator sugar on the top immediately after they came out of the oven since I baked these at the holidays. I will definitely bake these again.
