Guacamole

This was by far the best guacamole I've ever had, let alone made. I followed the recipe exactly, but instead of the cayenne added 1 seeded and diced jalapeno for heat. Also, only used 1 tomato b/c we like more avacado. This stayed fresh in the fridge for 2 days in an airtight container-keep the pit in the container when storing and it lasts longer.

Scott's Buffalo Wing Sauce

Great sauce! The recipe as written is wonderful. We like it with a little more heat so will increase the hot sauce to 1/2 cup. For people having issues with the butter being too oily, make sure you wisk the sauce completely to combine. Once you do this the consistency is perfect. You can use this sauce as a base and add garlic, onion powder, etc. to create other flavors also.

Veronica's Hot Spinach, Artichoke and Chile Dip

This dip is SO good! Followed the recipe exactly, it doesn't need any changes (if you want a lower fat/cal version you can use fat free sour cream instead of mayo). I made this with sour cream for someone who doesn't like mayo and it tasted the same so may use sour cream from now on to save on the calories. Topped with a little extra cheese and broiled after baking. Also, was out of canned jalapenos once and used fresh instead, it added a nice crunch. This is requested at every party! I serve it with homemade pita chips - so good!

Caprese on a Stick

These are wonderful! The only mozz balls I could find were marinated so used those and it was still amazing. Other than that, I followed the recipe exactly. It didn't take very long to put together. Made these ahead of time and they kept just fine in the fridge. They also made a beautiful presentation. These got so many compliments at our party. I doubled the recipe and they were gone in no time. Can't wait to make these again!!

Fiesta Pinwheels

These pinwheels are AMAZING!! I followed the recipe exactly except omitted the olives (personal preference). These were the first thing to go at the party, everyone raved about them. I must have used too much of the mixture on the tortillas, though, b/c it only filled 6, not 8x10" tortillas so will probably double the filling next time. No one used the salsa for dipping so may skip next time but it helped make a great presentation. Can't wait to make these again!

Quinoa Side Dish

Wonderful recipe! Used chicken broth instead of veggie broth b/c that's what I keep on hand, and toped with a little drizzle of olive oil before serving. So good my husband has asked for it again!

Easy OREO Truffles

These are SO good and extremely easy. I make the truffles using the reduced fat oreos and 1/3 fat cream cheese and then freeze overnight before dipping into the melted chocolates with two forks and put them onto a wax paper lined cookie sheet. The chocolate hardens quickly so make sure you sprinkle the crushed cookies on the wet choc. so it sticks. I coat 6-10 at a time and then sprinkle the cookie crumbs.

Delicious Ham and Potato Soup

This was SO GOOD!! I've never been a soup fan but this changed my outlook on soups entirely. I did make a few alterations to the recipe: I used panchetta (about 1/3 cup) and ham and cooked the diced panchetta first then sauteed the onions and celery in the fat, then drained the fat, added the onions, celery, potatoes and ham (3/4 c) back in. Used 1 can of chicken broth and the rest water. Followed the rest of the recipe exactly. Topped with green onions, the panchetta and a combination of a little shredded gruyere and white cheddar cheese. It was absolutely amazing!!

Slow Cooker Buffalo Chicken Sandwiches

This was AMAZING and a new football favorite/must have! I made this with 3 lbs of chicken breasts, used one 23 oz. jar of Franks Hot Sauce and a little over half of a 12 oz bottle (after reading other reviews used this instead of Franks Wing Sauce to cut back on the salt) and a packet and a half of ranch dresssing. We were afraid it would be too spicy, but the ranch and butter really tone down the heat. After reading other reviews I took it out after 6 hours, shredded the chicken then put it back in for the next 2 hours. Also added the butter when I shredded the chicken. Putting the shredded chicken back in the sauce made a huge difference: it soaked up the sauce and was much more flavorful. Served on grilled hoagie and kaiser rolls with choice of cheese, slaw, extra hot sauce and ranch dressing. The leftovers were really good as well: made another sandwich the next day for lunch and am going to make buffalo chicken pizza with the remaining.

Insanely Amazing Jalapeno Cheese Dip

This really was Insanely Amazing! Made it this past weekend for a football party and it is a new favorite. After reading reviews I used 1/2 cup mayo and 1/2 cup sour cream and then I put extra parm. cheese on the top before putting it in the oven. I used fresh jalapenos (seeded and diced) and really liked the consistency. It was not spicy, next time will add more jalapenos probably, but even those who don't like jalapenos really enjoyed it. I couldn't find a bread bowl so put it in an 8x8 glass pan and it fit perfectly and was great after 30 min in the oven. Served with triscuit thin crisps, townhouse crackers, and celery and it was gone within 5 minutes. Next time I will make at least a double batch!

Banana Cream Pie Made Easy

Banana cream pie was requested by one of our friends for Thanksgiving so I made this for him (prior to this I hadn't had or made banana cream pie so wasn't sure how it would turn out). It was very quick and easy and for someone who is used to his mother's homemade banana cream pie he loved it and took the second pie home. The only issue is the recipe as is made two 9" pies. I used premade graham cracker pie crusts. Great, quick, easy recipe that tastes like you've been baking all day! Will definitely make this again!

Dark Molten Chocolate Cakes

This was very easy and extremely decadent. I added a tsp of cinn. to the batter after everything was combined (we love cinn. with chocolate) and it was unbelievable. I used a mini-cakes pan (it had 6 mini-cakes, very similar to a large muffin pan). I made the batter in advance, and let it come to room temp before baking only 12-13 minutes and they came out perfectly. Any more would have been overcooked. After baking, took the knife around the edges and then carefully flipped the cakes. I was afraid some would break since I baked them all in 1 pan, but they didn't. The inside was cooked perfectly and the chocolate oozed out. Presentation and taste were wonderful. Served with vanilla ice cream. This is a perfect dessert to impress the boss, in-laws or anyone really. The best part is you can prep in advance and just pull it out a little before dinner to come to room temp so it can cook while you clear the dishes.

Lobster Bisque

This is a good recipe, just not amazing. I will make it again, although not for my husband as I found out he doesn't like seafood bisques. As other reviewers suggested I used 4 T butter and 4 T flour to and added garlic (1-2 cloves), old bay seasoning (just a bit), and some parsley (maybe a tsp). Instead of the cayenne (didn't have any) I added a few shakes of hot sauce. Unlike many other reviewers I used milk (skim) and the consistency was fine. Many of the reviews also called for tomato paste, but didn't have any so put a few squirts of ketchup (after tasting and realizing it was missing something) in there and it added a lot to the dish. To keep a little more budget friendly used shrimp/crab instead of lobster and it was just fine. It would have been bland without the additional seasonings.

Mini Cheesecakes

This is a good basic recipe, but I have to give it 4 stars b/c I had to alter it too much to get a recipe I really liked. The recipe is good, but the vanilla wafers were not as good as when I used graham cracker crust. Added a little vanilla extract b/c it tasted like something was missing without it. Baked in mini muffin pans (15 min was perfect) and also topped with drizzled dark and milk chocolate.

Bacon and Cheddar Stuffed Mushrooms

Followed the recipe exactly and these are just okay, nothing special. Tried it again, adding garlic, parsley, mozz and parm cheese with the cheddar and they were a lot better, but still not great. They were mostly passed by when served at a party and people who had one didn't have a second.

Quick Alfredo Sauce

As written, it's a good base recipe, but it was very bland and way too thick. I debated between 3 and 4 stars, but when I made it a second time I had to change it so much it wasn't the same recipe so it's a 3 star. Recommend reducing the flour, add extra garlic, pepper, maybe some basil over the top and more cheese. I used skim milk the second time and it helped thin it out to alfredo consistency (and reduced the fat) or add pasta water if it's still too thick.

Buffalo Chicken Wing Soup

I was so excited when I found this recipe, we LOVE chicken wings and I've been in the mood for soup so thought it would be a perfect combination. The recipe as written is bland. It needs quite a bit more hot sauce, seasonings. And I wish I would have reduced the milk as other reviewers mentioned (there's way too much liquid and the dairy taste is extremely prominant) but I wanted to try the recipe as written. I had to find a way to save the chicken so as not to waste it and will not make this again
